🌹 Still trying to get it right.
I haven't decided yet. I bought a smoked ham shank so I may roast the whole thing or maybe cut some slices off for dinner and roast tomorrow. Not sure.

How about you?
 
I have a 2-3/4# boneless bottom round roast that will be pan seared and spending the day in the crock pot on low with carrots and taters and onions. Comfort food kinda day. It's big enough that we'll have it again tomorrow.
 
Mondays Dinner 12-20-10

It's raining but still I'm thinking of grilling a tri tip. My patio awning will cover the BBQ. Don of the Dueling Bubba's BBQ competition team just gave me their tri tip recipe. They won more competitions for their tri tip than anyone else. Can't wait to try it.

Lunch: Mixed salad topped with sliced mushroom cap, black olives, feta cheese, peanuts, sunflower seeds & smoked ham (canned).

I've changed my mind. It's pouring out there so I've decided to make a beef stew for dinner. I'll also serve either corn bread or biscuits.
 
Burgers on the grill unless it gets too chilly outside, and then it will be burgers on the cast iron inside.

Another one of those mouthwatering salads, Peeps! I made extra chicken last night, and baked bread this morning so that we could have chicken sandwiches for dinner tonight.

Dinner:

Smoked ham shank (unglazed) oven roasted in my large cast iron pan, turnip greens with diced turnips pan fried in the ham drippings and mashed potatoes (butter & sour cream) with natural ham juices from the cutting tray.

Peeps, you've got my mouth watering. I'll have to try that. My meat market always has smoked ham shanks available. I usually use them to make bean soup.

Thank you Leni. After I poured off the fat in the pan there was a nice brown fond/coating on the pan that gave the greens great flavor and the juices from carving were great as a natural gravy.

We had jumbo pasta shells stuffed with bacon, onions, mushrooms, ricotta and cream cheese, asiago, parmesean, and romano. The sauce was made with butter, flour, cream, 2% milk, a little chicken broth, cream cheese, and asiago, salt and pepper, and a little nutmeg. Then topped with a little mozzerella and baked. It was like a grown up mac and cheese. Not healthy by any means, but it was delicious!

The kids wouldn't touch it so they had spaghetti. LOL.

i had spicy peanut thai shrimp eggrolls as an appy...i believe pad thai to follow.

Another day without work, so Mama benefits again by having dinner ready when she got home. I had a bottom round roast that I pan seared then put in the oven for 3-1/2 hours with onions, celery and carrots. I then made homemade spaetzle that I tossed with bacon and onions caramelized in bacon fat, then topped with pan gravy made with red wine and beef stock. Some fresh steamed broccoli and cauliflower tossed in butter and garlic. Christmas cookies for dessert.

that all looks good! My folks are visiting, supposed to arrive tomorrow, but will be here in the next 15 minutes, half hour. So we busted our butts getting the house ready, and had totino's pizza.
yep, total junk.
I'm drinking wine now.
 
Thank you Mary. I put the ham in my cast iron pan because I wanted to fry the greens in the ham drippings. AND WOW was it good!! Even the hard to please girl loved it!! LOL

I would love some of those stuffed shells. I usually make them the way mom did with red sauce. But I have jotted down your ingredients and will have to give it a try. Next time I make shells I will hold some aside for me to have your way!! LOL

Some co-workers and I, along with a few spouses, got together last night at a funky Mexican-style restaurant to celebrate the holidays. I had a yummy margarita, too many chips with housemade salsa, and a beef taco.
