I already made this.
One piece for breakfast, another before work this evening.

Wow, seems like every time I pan fry cod, it falls apart (unless it's breaded) 🤷‍♀️
It was good though, the vegetable blend was okay, though the edamame was hard.

Cod is very fast cooking and doesn’t take more than 4-5 minutes tops. Do you dry it before it goes in the pan? I gently squeeze in paper towels before seasoning. Keep in the fridge before you add to the hot pan. That should hold it together ❤️

Yes, I dry it out between paper towels, seasoned with smoked paprika and celery seed, fried in salted butter 3 mins per side.

I decided to attempt to make a version of a bang bang chicken sandwich.
It's Realgood chicken tenders, I made a homemade coleslaw with nothing but avocado ranch dressing in the mix, chicken tenders had Korean BBQ sauce and hot sauce, added a few pickles too, on a brioche bun.
Did the sweet potato fries in the air fryer.
They come out much better that way.
I've been terribly busy today on Facebook talking all things nursing/ranting with my peeps, so if you didn't see it, you didn't see it.
I tend to restrict things, depending on where I am.
