I'm so impressed by everyone's pics - beautiful plate, Vera. I really like the look of that tortellini salad and will try it soon. George, your focaccia looks perfect, so evenly cooked. Peeps - I'm so sorry you could not enjoy the day, and hope your migraine is on its way out. My daughter has chronic migraines caused by a neck injury, and I understand how they just take you out.
We are perfectly safe, just a little inconvenienced. Wish I could say the same for others - apparently, there were at least three cars on the PV bridge when it went down last week. A taxi driver and one of his passengers were able to save themselves, while occupants of a pickup and a volkswagon have not been found. And in San Pancho, a town slightly north of us, the only access into the town was a bridge that has completely washed away. Really bad, because the regional IMSS hospital (Mexican government health care) is there. It is still overcast today and quite cool, but no more rain - yet. We normally get about 150" in the four months of rainy season, but we have been getting 6-8 inches a day for the past week.
We lost power about 6 pm, and it finally came back about 1 this morning. Our soup continued to cook on the gas range, but when I went to dish up dinner around 8, it was pretty dark. I did make some cornbread - no electrical "tools" required to make it. This is really good cornbread, and it calls for a cup of sour cream. I was out, so subbed some cottage cheese. Best cornbread I ever made - Jerry ate half a pan, with honey butter. And the apple turnovers were yummy - if you look carefully, you'll see that there is grated cheddar in the pastry. Very nice combo of flavors. If anyone is interested, I'll post the recipes for the cornbread and turnovers.
So sorry for those of you that had to return to work today. I remember what that was like - but look at it this way: just a 4-day work week!
