That lemon pudding cake provokes nostalgia. One of our guests took one bite, broke into a huge smile, and said "Ahhh. Just like my grandma used to make!" I know you don't make desserts often, but this one is really good, and I think it is better after it sits in the frig a bit.

I copied that lemon cake recipe. An 8 in. pan is small so it shouldn't cause to much guilty shared among 4 people and Ideal sugar sub used for the sugar. LOL
 
Well, I cooked the chicken breast fillets but not in the deep fryer. I breaded them and then fried them in my CI skillet. I fried asparagus in butter and made mashed potatoes. Then I made a gravy out of cream of mushroom soup and chicken broth. Now the problem is what to do with all of that leftover gravy.

That sounds YUMMY Leni! I used leftover turkey gravy from Thanksgiving to add extra flavor to my creamy turkey & rice soup. Maybe you can make a quick creamy chicken soup and add the gravy to it. Just a suggestion HIH.
 
We had Meatloaf, mashed potatoes, mac-n-cheese (yes, I blue-boxed it :lol:), and peas.

I used my new loaf pan for the meatloaf. You’ve seen this pan before in my Banana Nut Bread thread. The cool thing about this pan, besides being super non-stick, is that it has an insert for meatloaf that allows the fat to drain away from the meat and down into the bottom of the second, main pan. It works very well. I really like this pan!

I've seen those pans. I always thought they were a gimmick. Good to know they really work.

I like the idea of that loaf pan but I can't quite make out the name of it. Where did you get it?
 
Thanks! DW actually picked this pan up for me. I asked her to get a loaf pan for the Banana Nut Bread, and this is what she brought back. I’m actually impressed with the pan.

I forgot to take that first shot showing the two pieces before I made the meatloaf. So that first shot showing the pan is after I made the meatloaf and cleaned it up. It cleaned up real easily with just warm soapy water and a dish rag. Nice.

I don't know. I've only seen this brand at Wal-Mart and Amazon, but Amazon is not carrying it anymore. There are similar options though at Amazon. Click the link below.

What are the ambient temps now for this past cook you did. Wondering how well insulated this rig will be. Was it windy?
