What's for Dinner 12-14-10?

Now that's an idea. I just bought a new deep fryer and I have a package of chicken breasts in the refrig.
 
We're having company for dinner, and I'm making a rather complicated Portuguese dish that involves chicken, sausage, shrimp, peppers, tomatoes, onions, garlic, spices, olives. It sounds very good, but I've never made it before - I found the recipe on Epicurious. Also having focaccia bread with sun dried tomatoes, which I still need to make, salad, and a lemon pudding cake, which I just took out of the oven. I'll try to get some pics, but that is awkward with company, who tend to think it is a little weird when you are taking pictures of the food instead of the guests...
 
i luv minute-steak, got that from my Grandma & my Pap. seems as though that'll be a great dinner, lollie. i figure cremed chix, that i was gonna make way when ago. aw, well.
or cremed eggs!~
 
No carrots...decided on bread instead..
This meal is heavy enough as it is .. but good.
Comfort food.. :-)

Had a pretty busy day, so everything came from the freezer...homemade 4-cheese ravioli, homemade mini meatballs (they were supposed to be for Italian Wedding Soup), homemade sauce and homemade Italian bread. It pays to cook ahead when you're in the mood. Anyone remember the "Green Can" debates???:yum::yum::yum: Those people were sure stuck on themselves. I went out of my way to put it in the picture. Does that make me an agitator? GOOD!:yum::yum::yum: This was my first real attempt at making spaghetti sauce the way I like it...sweet & chunky. It came out great,and I'm glad I wrote down the recipe so I can make it again. It's going to be a killer sauce for pizza, IMO.

Well, I happen to like the green can stuff, as long as it's real grated parm and not that clumped shit lol

Our dinner: Chicken strips (dredged in highly seasoned peanut flour then fried in peanut oil), lemon pan gravy (butter, leftover seasoned peanut flour, chicken stock and lemon juice) steamed and buttered carrot coins and onion, mushrooms and Basmati Rice Medley (basmati rice, wild rice, garden herbs & vegetables) sautéed in butter, chicken stock added for cooking liquid.

By the way, I love to cook with peanut oil.

That Green Can stuff has a certain flavor that is needed for some of my MIL's recipes that DH wants me to make every now and them.

Thank you Sass! The flour smelled strong of peanuts before cooking. After cooking you really couldn't taste peanut flavor BUT it adds A LOT of protein AND ZERO gluten.

That Green Can stuff has a certain flavor that is needed for some of my MIL's recipes that DH wants me to make every now and them.
Well there is the skinny shake on can, then there is the parm that is shredded in a plastic container.
I like the type Joe was using, but use the shake on for popcorn, for example.

We just had one of the old reliable rotation dinners.

Shrimp, Spinach, Mushrooms & Pine Nuts over Angel Hair Pasta with a white wine, lemon, butter cream sauce. Over the top rich!

The pics on this never look good once I sauce it. I'll have to keep working on it. (Not yet ready for prime time)

Au contraire, chef. Your dish is magnificent with the sauce, and it is mouth watering to look at. Without the sauce it's like wearing a full tuxedo without the bow tie. It's just fine as is, IMHO.
 
Since I started getting Men's Healths' "Eat This Not That" newsletters, I am
pretty much done with fast food burgers and such. One every now and then for a treat, but I just can't see the fat, calories and salt being worth it.

So, that said, I was traveling today from NJ back to NC. If one rules out fast food joints, and doesn't want to do a restaurant, well, what's left for food???


Southwest Chipotle Avocado Chicken Salad with Black Beans Tortilla Wraps!

I stopped at a Giant grocery store.

Got grilled chicken, black beans and onions from the salad bar.
Snagged a jalapeno pepper, avocado and a lime from produce.
Got a can of Rotel tomatoes and chilis, can of Chipotle peppers and
a small container of plain greek yogurt.

Did some In Car chef work (yeah I carry a knife, can opener, chop sticks
and such in my car when traveling!), mixed it all up and was fairly impressed.

To me, the yogurt is a perfectly acceptable substitute for mayo!
Had a bit too much chipotle and the jalapeno heated it up too
much for non-chili heads, but otherwise, not at all bad. Could have
used more beans, and the avocado would be better chunked in at the end,
but not bad at all.

And pretty darn healthy, too.

I'm with Joe, Peeps. I would consider it a privilege to put my feet under your dinner table. You are one fine cook. That chicken is beautifully cooked.

I am so stuffed - our company just left, and Jerry and I had a second helping of the Lemon Pudding Cake. Trust me, amigos. This is REALLY good stuff. I can't claim any credit for the recipe. The gravy was nothing more than golden mushroom soup with some tomato paste and garlic added, but it did taste great with the two minute/cube steaks I'd prepared.


What you had for dinner does sound delicious.
If there is one cake I love, it's one containing lemon.. and that recipe sounds tres delicious!
