What's Cooking Sunday 11/06/16 to Saturday 11/12/16

Seems there is a new to us place called Mellow Mushroom that some co-workers are going to order from.
So.. probably pizza or whatever.
 
DD said she is making roasted chicken, asparagus, and whipped taters with pan gravy.
 
Well hete it is.

Yesterday, i opted for order out chicken. Iy wad late and we were tired.

We got home tonight and i heated the leftover chicken, added some mashed and wiltef dome spinach.
 
I got it! Screwed it up last time.

I give you POT ROAST. I'm remembering how to cook.

Either spaghetti in meat sauce or butter/worcestershire burgers.
Either way I'll make the romaine walnut salad to go with.
 
Andy, how did you do your pot roast?

I'm going to make one (chuck roast) for a potluck party I'm hosting weekend. I want to be able to slice it for sliders (I usually cook it so it falls apart and I don't want that).

Please post time and temps.

Interesting. The one that I feel that I messed up first was about 3 1/2 to 4 hours in the slow cooker. Internal temp of the meat was 185. I did not use a chuck roast, I forget exactly what it was. It would have sliced very nicely. For a pot roast, I wasn't happy because it didn't fall apart.

This one was a chuck roast I did five hours in the slow cooker. Both cooks on high. It did fall apart and was very tender. Internal temp something like 205. This one did not fall apart, but the fatty areas came apart quite easily. It could be cut with a fork and was quite tender.

Hope this helps. I have a meat chart taped to the inside of my dish cupboard door that I refer to constantly. Working from memory, I think well done beef is 165.

I really want chicken soup but not sure I want to go shopping. So it may be pork chops, veggie, mashed and gravy.


Now I want pot roast. I usually use a bottom or rump roast. Sometimes it shreds and sometimes it doesn't. Hub likes shredded. So do I but sometimes I get a combo of shredded and a portion that can be sliced which my DD likes and we are all happy. Lol

I like it shredded with BBQ sauce for sliders.
 
Burgers and salad it was.
No condiments or bread with the burgers, they're delicious just as they are.
Just pan fry, dab on a little butter 'til it melts then a splash of Lea & Perrins.

The salad, I think I've mentioned before- it's just a small bag of romaine with mayo (about 1/3 c or more, depending on how much dressing you like on a salad- then add some sugar to break it down to thin which makes it easy to drizzle like a good little dressing should) toss to coat, then add some chopped walnuts.
Simple dinner tonight.

I cut up a chicken. The back, wings, 1 breast, (plus a back and about 20 wing tips from the freezer), 3 unpeeled carrots, 3 celery stalks, 1 skinned large onion, the stems from 1 bunch parsley and green tops from 3 leeks are simmering for soup. The leg quarters and 1 breast are put aside for roasting.
 
Tonight is bunko at our house so I'll go out for dinner; probably fish and chips at Bob's Burgers and Brew or catfish at Dave's.
 
I took this to work with me yesterday for the nuker.
I love all of their (Amy's) products and keep some on hand in the freezer.

Tonight we're going out for steaks.

You make your own sushi? I've not done that in years.

Last night was brisket at Famous Dave's and was not bad.
They are doing a BBQ short rib special but missed it till to late.
I have a reason to go back now.

Tonight is pizza from Papa Murphy's.

No I don't. Hub and I don't eat that. The Girls have a favorite place to get sushi.
 
Well I just had one old fashioned large shredded wheat for breakfast.
Lunch will be chicken soup and tea with lemon and honey.
Dinner will probably be pork, potato or Knorr's noodle side and veggies.
 
That's a lovely quiche, Chowder!

I forget about those shredded wheat biscuits Peeps and really like them.
I had corn chex with banana sliced in.
Lunch will probably be a tuna fish sandwich, momentarily.
Dinner.. dunno yet.
 
Well dinner changed. Hub and DD's will have a chicken and veggie teriyaki stir fry with jasmine rice. I'll have a shell steak and baby greens salad dressed with avocado oil, vinegar (I haven't decided which vinegar; it will be either apple cider, red wine, or orange muscat champagne) and my all purpose spice blend. I love steak and salad because the steak taste so nice with the dressing.
