OH MAN I AM CRYING!!

i just saw "the best thing i ever ate" on food network and the showed a steak cooked perfectly!! folks i am a steak whore!! thats torture for me to see!! i will do almost anything for a perfectly grilled thick juicy medium rare steak!!

or roast beef!!

now fried buffalo wings in new jersey.

Anything?

Here ya go, Peepsie.

YUMMY

The wings just hit the grill for a little indirect grillin'.
A couple are still frozen together, but no biggie.
I hit them with a little Emeril's Essence because they are going to get sauced anyway and I like to season them with something, so I might as well use a bottle of something that contains a few things I like. Nothing wrong with premixed spices IMO. I'll probably add a little extra red pepper on the other side though. I like the creeper effect red pepper gives on grilled wings. It's a little hot.... whoa, it's a little hotter

And the sauce is made. Sour cream, Frank's red hot, smoked Spanish paprika and crumbled blue cheese. I might have to sample the sauce again and see how it's "coming along" (lol). Very tasty. Ugly in color, but tasty.

I'm in North East, not Erie.... add another 20 minutes or so  I'll have plenty.

So no crap, there I am, not five minutes ago giving them their first flip and my chickens squawk a bit and one really jumps. I look up to see who's getting rowdy with who and there's a red fox. Son-of-a-B.... Ten feet from the coop. Leggy thing, but a fox nonetheless.
Dumb me scoots into the house quietly thinking, crap, my favorite plunker is out at work, shotgun or 22 mag, shotgun or 22 mag.... I opt for the 22 mag and he's still reasonably close, but my 22 mag is not at the ready. I whistle, he stops from trotting off to look, but after I threw the clip in the rifle and drew a bead.... the damn safety was on. I never have the safety on when the clip is out of the gun. Crap. Missed my opportunity. Should grabbed the shotgun and sprayed the air.
So now I have a fox that knows where my chickens are at.

This means war. And it's still daylight, so now I have that to worry about.
I just might throw some wing bones and eggs into my havahart trap tonight.

A little bacon or ham added and you have what my mother used to call a western sandwich. Great with mayo.
Super pic!

thank you. i took a pic with the flash but it looked washed out so i went with no flash low light. i was gonna put bacon but it got veto'd.

I mentioned this in another thread, but I've found that moving back with a flash and zooming in to frame works pretty good.

And yeah, I gotta git that sucker. I'm still pissed I missed my golden opportunity.

So the spuds are on. They'll be a while because I didn't jump start them in the microwave, but I'm in no hurry and the wiings will keep.

Reach behind your tower on the top, when your fingers curl over the top edge, grab hold and tip it forward resting it on the disc drawer. Problem solved. :thumb:

High, like 400? Just some s & p? I can get them pretty cheaply. YUM!

Lee

450 degrees, then I top them with fresh chopped parsley, lemon zest and minced fresh garlic. Roast for 20 minutes then top with sea salt.

When you first get them you have to soak them a few times in cold water with kosher salt about 6 hours, changing the water other hour. Gets the blood out.

Flatbread done on the grill topped with a schmeer of ricotta followed by sliced, seeded romas, chopped fresh basil, drizzels of EVOO and balsamic then S&P. Served with a Columbia River Valley merlot. Dessert is raspberry sorbet from my pickin' patch.

looks great food ...
those spares?
Thanks, yes.
These are the cheap, frozen spareribs from Denmark I had still taking up a lot of space in my freezer since Memorial Day. Hope they're still good. They're resting now with Sweet Baby Ray's and I'm waiting for the rest of the family to come home. I'm also doing pizza as backup just in case these ribs turn out blah.... :D

i made chicken florentine ... no pics. its cool tho because i wont be making that again anytime soon. yuck!

We loved the roasted garlic at Ragin Cajun so much last week that I made it at home. Left the cajun spice off, however...and roasted mine a full hour.

Eventually we had blueberry peach pie with homemade vanilla ice cream..but two cocktails and 3/4 of a bottle of wine later and the camera was long forgotten:sorry: Maybe I'll get that picture after dinner today.
