What's cooking Monday September 21, 2009?

Wow, everyone all your dinners look great. We went to see my youngest grandson play his last soccer game and by the time we got home it was almost 9. We stopped at BK. Sorry, I forgot to take a pic. LOL

Dinner:

The left over eye round was perfectly cooked and i just couldn't bring myself to over cook it in a hash so this is what became of it.

Strips of sliced eye round roast over potatoes, onions, carrots, peas, pearl onions cooked in burgundy gravy with chives and thyme.

Wow- Peeps that looks fantastic- it is 11pm on the west coast, I just got off work. I ate somekind of tv dinner that I won't again.
Chicken fried S _ _ _. Anyhow- I will dream of this Picture tonight. Sure looks good!

That's nice Peeps. The roast beef still looks delicious, as do all the "stew" veggies.
So how do you cook all those veggies? I'm assuming you don't simmer for a long time like a stew.... maybe you do?

thank you chow. i peeled and cubed the potatoes and chopped the onions. then put them in a deep skillet with butter and cooked on a medium flame for about 5 minutes. then added the peeled and diced carrots, salt, black pepper, snipped fresh chives and dry thyme. i cooked on lower flame just till carrots turned bright (i didn't want to carmelize the onions or carrots). i added enough water to come half way up the veggies and added the left over burgundy gravy (which got really thick over night), 1/4 bag of frozen peas and pearl onions. covered and simmered just till potatoes and carrots were tender (actually the potatoes were fully cooked because they went in first and the carrots still had a slight crisp crunch). i sliced the roast and then cut into strips. the hot veggies went on the plate and the cold roast went on top. the meal was done in about 20 - 30 minutes.

you're welcome chow. the potatoes (they also took on a nice color), carrots and onions had a nice wine beef flavor because they were cooked in the gravy.
 
I took pics of my soup last night but the flash makes it look stupid...

I've had the same camera for 6 years, and just recently learned how to do this :huh:. If you camera has a little jagged arrow, click on that, and you should be able to turn the flash on and off. Mine has a little circle around the jagged arrow when it is turned off.

stand further away and zoom in to take a pic. i used to and still do sometimes wind up with flash wash out. but stand back more and zooming helps. or the macro (flower) will let you get close ups.

lol ok here ya go... bleach soup..... with some chicken and corn in it?? :bonk:

I'll try again when I heat up a bowl for lunch.
