I'm packing a ham sandwich, potato chips and fruit for my lunch today.
Not sure what the dinner menu is.
 
No clue what's for supper. All I know, is Tina mommy made a chocolate cake early this morning; with white buttercream icing.
 
Green chile chicken enchiladas, queso fresco as part of filling and topping, with cumin rice.

You heat up a tablespoon or so of oil per cup of rice, stir in the rice then add the cumin, I just eyeball it, but it's probably about 1.5 to 2 tsp, then stir and toast the rice and cumin until really fragrant, then add the liquid and cook.
 
Crispy skinned chicken thighs with coconut potato latkes with cranberry applesauce garnished with cardamom spiced mascarpone.

We had veal cutlets, breaded with cracker meal, yellow Spanish rice, and steamfresh mixed veggies. Chocolate cake for dessert.
 
DD made soup last night - chicken broth, diced tomatoes, baby spinach and cheese tortellini.
 
I'm going to the supermarket and see if I can find a decent rotisserie chicken.
Amongst the rest of my shopping.
 
The deli/hot food section was closed up with no workers present, so I went thru KFC and picked up a 3 piece big box, with the regular sides.

An adaptation of a recipe from 1 of our Thai cookbooks. Roasted red and yellow bells, shrimp, pork, chicken and rice salad with a coconut milk/lemon dressing.
