Good Sunday Morning everyone. I can't believe it's almost October!!


There are several options for dinner tonight.


I'm leaning towards Sheppard's pie for hub and I. DD's can order something if they don't want it.



Looks like it's going to be a lovely fall day today. Have a good one!

I have no idea.
They usually have a nice Sunday lunch at work, so it could be most anything.
Doubt if I'll have the evening meal there.
It's always a sandwich.

I'm pretty sure I'll make 2 individual sheppards pies for dinner. One each for hub and I.

The ground beef and onions were browned yesterday. I need to cook and mash the potatoes and finish the filling. It should be quick and easy to put together.

Half Hot, and half sweet Italian Sausage and peppers and little potatoes. It's baking in the toaster oven, and smells so good.

They turned out great. I just need to scale down the amounts because I have a pint of filling to use. Going into freezer for later use.

T- bone today!
I've not made crunchy peanut coleslaw in ages, so that as a side and possibly panko yellow squash rounds.

I wish I had a nice strip steak.

I’m waiting to go in for doctor appointment.

Good time to think about dinner.

I have thin cut chicken breast, eggplant and Bella mushrooms.

Not sure if I’ll use all, some or none of those.



I’m so hungry (Fasting blood work) but that’s not helping.

Maybe a mushroom and cheese omelette with bacon on side for brunch.

Tina found a cooked and frozen corned beef. That, someway, will be supper.
We have cole slaw mix, and Tina found the dressing to make coleslaw.... 1...2...3...
No measuring or looking for the spices. Pour on the slaw mix, stir, and eat!

Med, I made conch fritters once. Lots of chopping of tough shellfish, but the family and I loved them. Decided to just order them when I see them on the menu from then on, lol!

I had leftovers tonight, but the star of the dinner was my Bahamian salad.

We coarse chop and the conch and finish chopping in the food processor. They are Craig's recipe and use Ritz crackers as the bread part.

Today I plan on making flat bread pizza, with Italian sausage, garlic, tomato sauce, fresh mozz and herbs.

It's the stores brand.

We had arepas tonight. I remember why I'm not fond of them. The texture. Fillings were mojo marinated pork, black beans, pickled red onion, fried cubes of boniato (latin white sweet potato), queso fresco, lime/cilantro/salsa verde crema.

The breading was wet and sticky. yuck! I scraped it off!
