That looks delicious! How did you make your eggplant?

Slice thin, placed on a Pam'd sheet of foil, spritzed with olive oil, seasoned with s & P and Italian seasoning. Roasted in convection toaster oven at 350 for 8 minutes. Spoon on a little tomato sauce, shredded mozzarella, parm cheese. Bake in the toaster oven for 2 minutes.
