TGIFriday, 5/6/2011, Whats on the menu today?

Great! I hope you like them. Our resident bread expert is JoeV. He doesn't use a bread machine though, he uses a KA mixer. His breads are amazing. He's posted bunches of pictures in the "what are you baking today" thread. You ought to check them out when you have time.

Oh I have been all over his pages & posts lol. Awesome..

I find my BM is so much easier then my KA mixer. Less mess. less clean up. with the BM just put all the stuff in, push start. when it beeps dough is done. I finish it off in the oven tho. Makes a nicer loaf JMO.

I'll never ever buy pizza dough again..:thumb:

that pizza crust caught my eye.. Homemade??? Nice & crispy & full of air holes .. just like I like it.

CC I use sourdough starter that is fed every three days to make my skins ( dough) so the dough consists of KASL (King Arthur's are Lancelot) flour, salt, sugar, water. No IDY (instant dry yeast) or any other form of added yeast, just natural yeast from the flour. I've been making my dough this way for over a year now. It really takes a commitment to keep the culture alive but it does make a really good pie skin. KABF (King Arthur bread flour) in-service size bags is called special flour also works very well for pizza dough, in fact, it might even be better than KASL flour. Here's a picture of the "special flour"

I cook my pies on a stone in a preheated oven set as high as it will go approximately 600°f + for 6 1/2 minutes to 7 minutes. this one should have come out at 6 1/2 minutes , but I screwed up and left it in for 7 minutes.

I copied your breadmachine bread recipes yesterday .. I'll be getting my groove on making bread this week end..

I have a huge fondness for my machine.:thumb:

CC I don't know if you've ever made Drew's famous onion dill bread before but it has to be one of the best breads I've ever made hands-down. I made some this week in my KA mixer but the original recipe is from a DAK bread machine. This bread is absolutely fantastic. I'm not kidding. Here Is the original recipe for a bread machine.

Mama had a bread machine recipe? And I missed it?

I am yeast challenged, but I can use my bread machine. Where is that recipe?

...............off to look for the link........................................

All I made was some focaccia bread today. I made some yesterday in the oven exactly like I did today but yesterday it had to be finished under the broiler to brown enough and melt the cheese. Today after exactly the same recipe and time/ temp. in the oven the cheese was dark brown, almost burnt. I have a thermometer in the oven so I can't figure out why I get different results with the same method... It was good though.

ok that Dill bread sounds great.

I have the stuff to make it.

Bread flour? Or AP..

I am so making this.

AP will work the bread flour is probably best. I'm not kidding you. This is really fantastic bread. I've even made it into hamburger buns holy cow were those good!

They're on my website SS. I haven't looked at those in a long time. The pictures are terrible. Thanks for pointing them out Carolina, I need to redo those pages and I also have several to add.

I don't know Norm. Maybe if you post your dilemma in the "What are you baking today" thread, JoeV might come along and be able to help.

well, i've reflux that's got me ill, 'cept i hear celebration from here-till-there nearby where i've an open & ongoing invite. thier food smellz yummy to me! a few drinks, maybe? we'll see.

everyone's dinners look and sound great! man am i hungry.

i was just tipped about a 24 hour colombian/latin american restaurant on 9th and 51st called emapnada mamas.

http://www.empmamanyc.com/regularmenu.php

i'm trying to decide between the chicken stew - pollo guisado, or the skirt steak with chimichurri sauce - entrana a la plancha.

I have made a cuban chuck steak with chimichurri sauce here several times because the kids really like it. Don't know about the chicken stew.

sweet Jesus, i'm beat & could zonk now, 'cept my stomach won't lemme be, w/ its incesssant rumbling & griping........ i'll trek to some bar or another for food, as my food provisions here have significantly diminished as of late.
maybe i'll ring my ex, see if he'll bring or order me food. hm. pizza?

luvs, call the boy and tell him you need food. if he says no, tell him sex in the near future is out of the question. you have to train some men simply. carrot and stick, asit it were.

norm, i'm leaning towards steak and chimichurri. i could save 7 bucks and get chopped lamb over rice with tahini and hot sauce from a late night halal cart.

decisions, decisions.

I bet if you save seven bucks you'll get a lot of rice and a little lamb. Lil Bo Peep with sesame paste and Tabasco.

You all made nice dinners.
We had the usual, Friday pizza on the rehab unit.
Just happy I wasn't scheduled to work out on the floor (nursing home wings)-- from the looks on the faces from some of the nurses at clock out time.. they didn't have such a good day.
Boo hoo... suck it up... it's your job.

Thank you everyone!!

I started quoting posts and realized I had quoted them ALL!!

:wow:OH LORD the food looks FANTASTIC tonight.

I NEED RECIPES!!

The Alfredo, pizza, chicken steak OH MY!! I want some of everything!! I didn't have breakfast yet and now I want DINNER!! LOL

Norm you need to post your bread pics in the baking thread. You make some fantastic breads. I can't wait to see you dinner pics. You make some yummy meals.

Great dinner thread! All the dinners look delicious. I ended up eating shrimp salad and pickled beets.

I made a very simple dinner because I was exhausted after a busy week. Pan-roasted pork chops with S&P; simmered canned green beans, sprinkled with lemon-pepper seasoning; and boxed pork stuffing. It really hit the spot. Then I hit the sack, about 8:30.
