I went to a gals martini party last night and this is the dish that I brought. It’s soooo quick and easy, especially using frozen meatballs. I always get asked to bring it again.
32 oz frozen meatballs (1 bag)
1/4 cup water (add more as needed)
2 Tlbs melter butter
1/3 cup light brown sugar
3 Tlbs chipotle pepper sauce (I like Cholula)
1/4 cup sliced green onions
3 Tlbs chopped cilantro (optional)
Generous squeeze of lime juice- about 1/4 to 1/2 a lime
*Put water, butter, and meatballs in a large nonstick skillet over medium heat. Cover and cook 10 minutes, swirling occasionally.
*Add brown sugar and cook uncovered, stirring occasionally until meatballs are glazed. (Here is where you might need more water to keep it from burning).
*Remove from heat and stir in the pepper sauce, green onions, and cilantro. Squeeze in lime juice. Toss everything.
