Spring Salmon Bake

Tonight I smoke cooked a spring salmon fillet shoulder using alder, cherry, and plum for smoke and it was excellent. there is enough leftover for salmon patty sandwiches and hopefully scrambled eggs with salmon.

It makes it easier to get off the grill, especially with the fillets.
 
Tonight the mrs made salmon patties and said they
were the best she had made. The coho had a lot to
do with it, she stated.

She used shredded salmon, panko, fresh chopped
green onions, salt, pepper and eggs then fried in
butter with a medium low heat. Our new stove burns
hot so medium is way to hot.

Last night I grilled salmon, a chinook I caught last summer, the two shoulder pieces which are full of bones. The smaller piece was sockeye that was included in the last box from Omaha Steaks. JA ate that and Nancy and I shared one big piece. I saved the other piece for salmon patties next week. I used plum, cherry, and alder for smoke.
