I just noticed the end of my story was cut off. I make this cold string bean salad the night before or early in the morning and serve it with my Christmas eye round roast. It is good warm but better after it sits awhile and cools off.
I think green beans almondine and Yorkshire puddings with onion gravy would be loverly.
You could use the onion gravy on the potatoes as well.

You're going to need some color. I was going to say mix in some roasted cherry tomatoes too, but looks like someone doesn't like/is allergic to tomatoes. If it's just doesn't like, they can get some asparagus without the tomatoes.

Asparagus Goldenrod is pretty, colorful, and simple. It's kind of an old-timey thing. If your dad will be there, he might get a kick out of that.

You could try Finnish Christmas meal side dish called "rosolli". We usually serve it cold but its suitable also as warm dish. Also, that´s colorful.

I'm partial to baked squash, usually acorn or turban.
