I'm making flank steak. It's marinating now. Not sure if it will turn into fajitas or just sliced with sides. TBD
 
I have some country-style ribs out but I dont think I have time to do anything with them.

It's rainy.... I feel like a casserole, but I have shopping to do yet after DH gets home.
I gave up after WalMart and refused to be alone w my children any longer :(

I haven't cooked since the steaks, last week...been too hot & lazy. I'm not sure DH will be home early enough for a home-cooked meal, tonight, although sammies and soup sounds nice. We'll see. :smile:
 
We are having a couple of Rib Eye steaks, Cooksie's Mustard Potato Salad (some of my things added), B&M Baked beans out of the Jar and some corn on the cob.

Looks great Bam! I'm going to have to screw up my courage and try to smoke some ribs for the IC competition. I have the smoker, just not the ribs or the courage......yet :(.

ribs are pretty easy to do... take it slow... depending on how u like ur ribs... fall off the bone are the easiest to cook... 3 hours on the smoker,2 hours wrapped in foil with some liquid, 1 hour back on the grill to firm up and add sauce..

in my UDS, i smoke for 2 1/2 hours, wrap for about an hour...then glaze and firm up...thr ribs will generally tell you when they are done..either the meat will pull back from the bone about 1/4" or when u have done enough ribs, you know by how they feel when u pick them up..they bend a certain way
 
Go for it Cooksie just get it smoking and to temp (200 - 250 approx) before putting the ribs in and leave it alone for a couple of hours before checking them. As for the Rib Eye's I had 1 tonight for dinner along with your Mustard Potato Salad (with a few more ingredients of mine) as well as a cucumber salad and corn on the cob.
 
Had a $20 gift certificate to a local carry out place (Kuhars), so I got the Weinerschnitzel (2 huge pieces), Potato salad, mixed veggies, bread and a tossed salad. DW ordered a (huge) BLT with potato salad. We then added 3 large pieces of apple strudel for dessert. Total price: $20.50

I shared mine with DS, so we all ate on the cheap tonight.

I making some pork fried rice this evening. I trimmed 3 racks of spareribs down to St Louis style last Sat so I've got lots of smoked trimmings left over.

The flavor was awesome...it was, by far, the highlight of the meal. The grilled cheese were just accents...heh!

No left-overs, since I made the recipe (as posted) and there were three people eating (me and two very hungry guys).

I hope to make it again, and have left-overs, so I can see what it's like a day later. :wink:

Well we ended up having steak fajitas.
