Ingredient Showcase ... Mushrooms

Here's my contribution to the mushroom showcase. It's a strudel of wild mushrooms in a sherried cream sauce. SousChef declared it outstanding.

I used portobellas, criminis, shitakes, and porcinis.

Peep, yours looks nice and healthy! I love the addition of burgundy in the sauce, and I'm defiinitely going to get some spinach pasta!

SS, I hope you and SC split that roll and ate the whole thing. I bet I could have eaten the whole roll myself!

Trust me, you couldn't. It was very rich (sherry, butter & heavy cream). But between the 2 of us, we did polish it off!

I made Milos Cihelka's Golden Mushroom Soup.

Used some portabellas, criminis, the rest of the shitakes, and some dried poprcinis. Followed his recipe, except i stirred in about 1/2 tsp of sherry at the end. We were very happy with it.

Sautéed mushrooms and onions (sautéed in EVOO, butter, sea salt, ground peppercorns, ground red pepper flakes and a splash of burgundy).
