Christmas cookies

I want to make two more cookies which would make 13 varieties (a bakers dozen). But I'm not sure my hands and shoulders can handle it. BUT I'm going to try! :bb: LOL

Those Pecan Puffs look like Russian Teacakes which were my brother's favorites. Pretty much flour and butter, right?

Yes, I made a double batch, so used two packages.

They are messy to make, but SO worth it!

Good Lord..
Note to self: never use Pillsbury refrigerated cookie dough to make thumbprint cookies.
The first batch collapsed and spread out, with no sign of thumbprint lol
I had to half each dough ball in this batch, then re-thumb once they cooled.

I learned a few tricks/tips over the years.

My thumbprint cookie tips:

#1 - Make the thumbprint/indent with a pestle dipped in powdered sugar if you have one.
#2 - Fill the thumbprint BEFORE baking.
 
I found 4 new cookie recipes I will try soon. If they are good they will go into rotation next Christmas.
 
How many cookies did you get from 1 recipe? And how much did they spread while baking?

A single batch makes about 2 dozen (Cook's Illustrated says to make 22). I put a dozen on each sheet and they didn't run into each other. The cookies are very much like a brownie, so rolling the batter into balls is messy.

I have never filled thumbprint cookies before baking them. Didn't know you could! Well, whaddaya know!
