Caviar and Black Raspberry Jam

Okay, here is the challenge:

I am going to visit 2 friends - one loves caviar, and the other hates it as much as I do.

I have some excellent Black Raspberry jam from Stonewall Kitchen, that looks and feels a lot like caviar.

Tell me what appetizers I could make - half of them topped with black caviar and the other half with the black raspberry jam?

I was thinking just putting dollops of each on Ritz crackers, but I wanted other ideas.

Lee

the first thing that comes to mind is blintzes or crepes.

maybe garlic bagel chips. sesame bread sticks.

on smoked salmon toasts?

The raspberry jam might be good with a whipped cream cheese (or just a softened block of cream cheese) and a thin cracker. I've seen green pepper jelly served that way, and it seems to be pretty popular.

Cooksie, that sounds good, too! Who wouldn't like THAT???

Thanks!

Lee

Noticed the post is a few weeks old, but maybe you can use the idea next time.

Potato pancakes w/ a dollop of sour cream, topped w/ caviar are fab!

I'm sure you could use the jam (w/ sour cream) in place of the caviar as well.

It's not too late, CC - I still have the jam.

I was thinking of finger-food canapes, but I may be able to work with the potato pancake idea, too!

Thanks!

Lee

The DW ordered lobster salad with caviar at a high end restaurant a while back. The salad came in a caviar tin with a thin layer of caviar on top so it looked like the tin was full of caviar until you dipped your toast into it.

Maybe you could get a couple of those tins and do the same thing, one sweet with the jam and one savory with the caviar.

Hi Qsis. Any of the above-mentioned last two ideas appeal to you? Didn't see a reply.

Well, I may not have explained myself clearly.

One of the friends I will be visiting next month likes caviar, and the other friend, like me, does not.

I am looking for an idea for an appetizer, preferably a canape, where I can use the caviar on some pieces and the black raspberry jam on other pieces.

So far, the idea of crackers or toast points smeared with cream cheese and topped with either thing is the closest to what I had in mind.

Thanks to all who have replied!

Lee

The toast points idea is a good one. But if I was going to spend the money for caviar, I would spread the ones for caviar with creme fraiche.

Lee,

I've done these with blackberry and lingonberry preserves. I think they'd also be great with caviar.

I bought a 'log' of brie (I think I got it at BJ's). Wrap it in layers of phyllo dough. Bake. Slice. Top with jam/caviar.

Instead of brie, you could soften cream cheese, shape into a log, then chill.

The famous Russin blini (pancakes) are served with either caviar or jam/jelly. Works perfectly with both.

Lee so how did it go with the friends visit? Which way did you opt to serve them and was it a hit?

How embarrassing is it to admit I have never had the opportunity to even try caviar. :hide:
(what is caviar ...something gross but I can't remember what. Fish eggs maybe?)

Yes Doc, caviar is fish eggs - the really expensive stuff is from sturgeon from the Black sea. You do get other cheaper stuff (it can also be labbelled as roe - a common one is lumpfish roe)

Oh, well I never got to try anything, since QBro got to the jam and finished it, LOL! That's okay, since I bought it for him anyway - I just didn't think he was going to eat it.

Again, thanks for the ideas, everyone!

Lee

P.S. Doc, caviar IS gross!!!! Yeeeeee UCK! (IMO, natch)

A funny story about caviar. When my mother & father were going out together in the 1960's, they went to a party with her younger brotehr. One of the offerings was caviar on biscuits. Both my mum & her brother took one to eat, tasted it and prompty dislike it. They then slid the biscuits into my dad's jacket pocket to hide them. He was not amused.

:yum: Funny MM. He probably put the jacket in the good will box after that. I bet whoever wore it was popular with the cats, like BT said.

I don't care for oysters on a half shell so I doubt I would like caviar. Never tried escargot either .... chocolate covered ants I've tried. Heck, it has chocolate in it, how can it be bad. :D

Doc, There is no similarity. I can't eat oysters on the half shell either, but I love both caviar and escargot. You won't know until you try it.

You might like escargots, Doc. Heck, I hate anything fishy-tasting and I love escargot. Know why? All you taste is the luscious melted garlic-herb butter they are cooked in! Grab a knob of bread to dunk in it, too!

man, i love oysters. all kinds, from plump to scrawny, briney to sweet. i haven't had them in so long, though. i need some soon.

i love snails as well. those big, greenish ones prepared frenchy style, or the little black ones in spicy black bean sauce, or giant ones sliced in a fra diavolo.

i'm so hungry and it's not even 9am!!!

Yeah, but, BT, you like EVERYTHING!

Somewhere along the line, I think you listed a teeny list of things you didn't like, but I don't recall what those two items were. :flowers:
