My friend, Lynne, is staying with me for a bit and showed me a great way to grill vegetables so they don't fall through the grates, with easy clean-up.
On a cold grill, take a piece of foil (heavy duty foil is perfect) and place it over the area of the grill where your vegs. will go. Wrap the edges around the grate.
Take a pen and poke holes all over the foil. Spray with Pam. Crank up the heat, put the vegs on and grill, turning as needed.
Lynne did sliced white and sweet potatoes, onions, peppers, mushrooms one night, with flat iron steak.
Another night, she grilled carrots (with a balsamic reduction) to go with sesame-ginger marinated chicken breasts.
