ABT's aka jalapeno poppers

6 jalapenos - deseeded and cut in half
1/2 pkg of cream cheese
1/2 cup cheddar cheese
approx. 1/2 lb bacon
spices(your taste will tell you what you want.

optional ingredients
smoked sausage
shrimp
pepperoni
optional ingredients are endless, just depends on your taste

mix spices and cheeses up in a bowl.

using the back of a tablespoon, start filling the jalapeno halves with the cheese mixture. take a slice of bacon and wrap around the japs. you can stick it with a toothpick to hold it into place but i usually dont..

to cook, place in a oven at 400*F until the bacon is crispy. the best way is to put into the smoker and cook until the bacon is fairly crisp and the cheese is almost oozing out.

bam .. did some last weekend ...
i honestly did not see much difference ...
they were some a buddy gave me that he has been growing ..
but he said they were not as hot as they should be ..

the last ones i did, they burnt for about 1/2hour then again about 4 hours later..lol

your probably just got a weak bunch of habs..
 
Hmmmmm, I've made these a million times and have many photos of them, but can't seem to come up with them here. I MUST have posted them here before.

Well, anyway ....

My jalapenoes this year are HUGE! Made some ABT's with 9 of them, using a pound of bacon and a whole container of cream cheese. Did them indirect on a gas grill with a foil packet of wood chips (note to self to get a metal box). Each one is almost a meal!

Gave all but one away to neighbors.

This recipe looks similar to Philadelphia cream cheese recipe.
I will follow it up to a point, but will make it in halves and include
Sautéed dove breast slices Then smoked on the grill with cherry
wood.
 
disclaimer… I’ve never made these before then my wife started telling me how she wanted hers and what I should be doing.

These were a lot of work and did not do the best job of it. If I do them again there are several things I’d do different pertaining to the pepper and bacon. I would leave the pepper in halves not quarters, and I’d use a thinner cut of bacon and not cut in half…. My wife started telling me what to do and it effed me up. I will say they tasted great. The peppers weren’t hot at all.

I cut my thin bacon slices in half lengthwise with kitchen shears to wrap around the stuffed jalapeno halves. No need for toothpicks, usually.

Then dust with BBQ rub. Which reminds me - gotta order more.

I shredded Tillamook sharp cheddar and used Nancy’s Probiotic Cream Cheese which is quite tasty.
