Breakfast for dinner. Also using up some
Leftovers into this Omelette. Yogurt
& a 7 up.

I bought a Catalan cookbook. The rule here is "Kathleen cannot buy another cookbook unless she makes something from it." I read cookbooks like novels. So....I made for the first time:
  • Brandada de Bacalla - Shredded salt cod with mashed potato served with crostini - This was pretty tasty. It's like a dip or spread and begs to be eaten lingering while conversing with friends.
  • Boleta a la Llauna - Roasted mushrooms with garlic and parsley - To be honest, I was disappointed in the mushrooms. Sure they were pretty and they were okay. However, they lacked any wow factor what-so-ever.
  • Amanida D'Api - Celery Salad - This was a massively pleasant surprise. Celery, champagne vinegar, olive oil, fresh cracked pepper, a pinch of salt, hazelnuts, and parsley. I added cucumber from the garden today. It was a great and refreshing side salad that I will make again this summer.

I'm trying some new things today. First, I'm starting Easy 20-Minute Homemade Bread, but it will take a bit longer 'cuz I'm using the "dough" setting on my bread machine to save a little work. Dinner will be a version of Gnocchi Skillet with Chicken Sausage & Tomatoes, I don't have any gnocchi in the pantry, so I'll improvise ;). I'm also thinking I'll make Caprese Salad Bites, 'cuz it sounds good and I've got everything to make them. Won't be the full recipe, but enough for the 2 of us.

It all looks beautiful, Kathleen! I love making an entire meal out of one cookbook!

Looking on the counter there are 2 packs of taco mix ready to make taco's. Tina can do that.
I'll just take it easy today. DD will probably grill something also. I'm not a fan of taco's. They are so messy to eat. One good thing, is the weather cooled down a bit. It's 65 degrees out, and cloudy.
The wife just called, and said she is on way home from Giancarlo's with eggplant parmesan for lunch. Ummmm!

Well I did get a pack of Ciabatta rolls in order to put a sandwich together.
This has butter lettuce, tomato, Colby jack, onion,avocado, Duke's mayo and bread and butter pickles.
I've got lots more in order to make different combinations this week.
Also got an 8 pack variety of Nestlé Drumsticks lol
Let's see how long those last.

I sometimes put all the taco fixings in a bowl and scoop with the broken crunchy taco shells.
Yeah... The kids do that when they have taco's, but I have to wet the chips so they don't cut my gums in the roof of my mouth. The soft shells are great if we have them. If we only have the hard shell, I soak them in warm water for a few seconds till they soften a bit.
 
I'm having the same as yesterday. I organized it differently so perhaps the fella will believe he got a completely different meal. :giggle: I slathered the cod spread/dip on French bread and broiled it. It made a nice finger food.

I added some wine to the mushrooms and gave them a stir. It definitely improved them!

Here is a little peek at the taco's we had tonight. Now Tina filled my taco soft shell, and she has a habit of over filling them. I told her I would fill my own, but she's being nice, and just trying to please me. ....... I just shut my mouth.

My father liked the crunchy taco shells. Yep, they are messy. Mine are always soft tortillas.
