Lunch was Grilled Cheese & Pesto sandwich with Mac Salad. Dinner will be Glazed Chicken Mini Meatloaf with roasted carrots and green beans...maybe yams or salad too. :chef:

Crab cakes, pan roasted asparagus and Caesar salad too. Earlier, I made banana bread, but that's for Thursday.

We had Southern Mac & Cheese topped with Pulled Pork, Crispy Onions & Crispy Jalapenos. I used a drizzle of BBQ sauce, DH used a drizzle of Valentino Hot Sauce. Freezer pulls, so easy meal. I spent the day making potato salad and salad dressings to make lunches a bit easier.

Only if your hand gets in the way of someone wielding it! :lol:

I've been making Pineapple Cranberry Sauce for a number of years. Goes well with turkey or ham and even people that say they don't like Cranberry Sauce like this one.

Spaghetti & meatballs, garlic toast and salad. The meatballs were from Costco, chicken/basil. The sauce just a jar of Roa's marinara. Easy and tasty too!

I tried a Walmart bag of frozen root veggies, ho hum, they don't beat just chopping them up myownself. I roasted them and served them along side of Salisbury Mini Meatloaf, mashed taters and Onion Gravy. Good meal...

Big lunch today, so dinner will be a salad with a chicken patty. Bing, bang, boom...

We're having Chicken Enchiladas, beans and rice. Last time I made chicken enchiladas, I put half of the filling into the freezer for a future meal. Today is that day. The beans and rice are also from the freezer...so easy meal tonight. :readytoeat:

I'm thinking Garlic Steak Bites with a new-to-me recipe for Baked Potatoes with Whipped Feta and pan roasted asparagus.

I order Christmas cards in October. I write them out in November. I mail them the day after Thanksgiving. Our gift list is really small and usually online, so they get shipped directly to folks - have you seen the price of postage these days!? If I don't pace myself, I get very frazzled too...
