Luckytrim needs advice!!

I've never had, much less prepared, Chilean Sea Bass Before.... Too Pricy, and anyway, I'm a catfish kin'a guy........... well, it was on sale at the Korean Mart today, three bucks a pound off, so I went for it.........

I have a pork roast thawing. Getting my revenge on Porky for causing all this uproar. :) :) :) :)

I have veggies fresh to steam but... I really want those garlic taters that were posted yesterday. We shall see.
 
I dunno.... so busy cleaning this morning I dont want to mess it up and cook!
Gotta continue leaf blowing today, may get too carried away to eat again.

Well I had a favorite I use to order, it was Kalamata olive encrusted sea bass, it complimented it sooo well!
 
Luckytrim, a filet might be a little easier to deal with as far as crusting and such. I've only really grilled steaks like that, then made some sort of topping. I would definately stick with clean flavors.

Is that the only piece you have or do you have more? We either batter and fry it or sear it and make a white wine, lemon and parsley sauce to go over it. It's quite a tasty fish!

We're having dumb-dinner - chicken nuggets and fries :bonk:
 
I'm going to go no brainer tonight (I think). I've got a little red gravy and a piece of sausage leftover from last night, so I'll finish off the last of the frozen cheese raviolis I have. I'm also going to finish off the loosemeat from the other night by putting it in taco shells with cheddar cheese and Vidalia onion. And a beer or five.....
I have got to make a conscious effort to eat something that's been frozen and saved at least a couple times/week. And also finish off my leftovers from dinner. I generate too many leftovers. Not that I don't eat them, but my freezers are half full of containers. Something will sit in the frdge for three days and I grab it and freeze it for later (lol).
 
Dinner tonight will be one from that most essential of food groups, beer! I'll pair that with my pizza dough topped with chorizo, roasted garlic, jalapeno's and 4 cheese mexi blend.

That piece is almost 2 pounds...........
 
Then I would pan sear it in butter/olive oil/salt/pepper. Remove from pan and set aside to rest. Pour in about 1/4 c of white wine, 2-3 Tbsp of lemon juice and chopped parsley. Let the wine reduce and pour over the fish. Mmmmmmm

We're stopping to see my mom and then going to a local joint "Burgers n Beer" to get some burgers and beer. lol Probably some fried green beans also.
 
Well;
I let the Warden convince me to split the steak (2 lb) and only do half... after much pacing and reading and poking around, I decided on a Lime-Pepper seasoned steak, baked, with hitch-hikers, basted in butter sauce at the end...........

complimented it with baked red potatoes w/ sour cream, a mix of Mustard Greens, Soy Beans and red bell pepper chips, and a salad of Field Greens, cherry tomato and cuke slices................

Looks great, LT, but it sure doesn't look like the steak you posted earlier today. It layed out just like a beef steak, which is kinda cool. Delicious looking.

The place was packed as usual and the service was real slow which is unusual.............but the food was outstanding!!!!
Have you ever been there for breakfast??
 
Puerto Rican grandma neighbor hooked me up with some chicken and potatoes... YUM... nice to have a home cooked meal.... she is always trying to feed me and my dogs.. such a cool lady.

No I have not. We like to do breakfast at home, but will frequently buy breakfast food for dinner. It's a hassle on a weekend to roll out, go through the routine of getting ready (min. 1 hour for DW) and go wait to be served something that doesn't hold a candle to homemade breakfast chow. it's really the only meal of the day that we eat 99.9% of the time at home, and it can be done in your bed clothes and unkempt hair. LOL

Well I tried!The Onion Rings and Fish were edible!
After practicing on my wife and Daughter,
My plate came out looking 1/2 descent!
I did not destroy the kitchen (Bob, I see how it could happen).
I found an unbelievable good buy. (I know I am going to get yelled at by
Someone). I bought a Big Box of Individually wrapped Tilapia Fillets
At "Walmart"!
I can see it now- Someone walks into a exclusive restaurant. "This fish is Great- Where did you get it?" LOL. Believe me! This fish is really good!

Dan, Giant Eagle sells the same fillets. I like them individually frozen and wrapped like that, they keep really well in the freezer. QSis turned me onto McCormicks Fish 'N Chips batter mix. It's pretty good.

Pancho, that was a nice change I'm sure. What a nice lady.
