What are you eating Sunday, 9/21/2025 to Saturday, 9/27/2025?

Last night was leftover ribs, jalapeno cornbread muffin, slaw.

I don't usually use frozen vegetables and tonight I remember why. These Birds Eye Fusion vegs look so good on the package that I grabbed a bag and put it in the freezer. Tonight, I was out of fresh vegs, so I nuked the bag. No flavor to the sauce and none of the vegetables, except for the edamame, had any texture. Yuck. I added soy sauce, sriacha and sesame oil to the leftovers. Wish I had done that before I ate tonight's portion.

Served with the last of my Peruvian chicken with chimichurri sauce.

Thanks Lee! Fingers and paws crossed! I don't usually do this: I bought a Rot Chicken at the market today to make this recipe. Busy day and I wanted to simplify dinner. The chicken made a bit more chicken than the recipe called for, so I increased the other stuff and grabbed a slightly larger pan. I will cook it quite a bit longer since, (1) it is bigger, (2) we usually prefer casseroles cooked a bit longer, (3) I have it waiting in the fridge... :ROFLMAO:
