One of my high school bud’s mom made the best. They had a wood burning stove in the kitchen and she would make them the old way on top of the stove.

On top of the stove in a cast iron pan? Or what? I looked up "lefse griddle" and don't see the point, if you can use a pan.

It looks like a tortilla, only made with mashed potatoes. Do most of them have sugar?

She made hers right on the flat stove top, no griddle at all. The usual thing is to butter then sprinkle with sugar. She cooked on a wood/gas combo stove she got at the end of WWII right up to the late 90’s when she moved to Florida to her daughter’s.
