Baked Tilapia Filet, Air Fries, Peas & Lefty Corn, Cole Slaw, Cocktail Sauce...
The Coating mix was for Pork, but hey, worked fine !

I marinated jumbo shrimp in ginger, garlic, etc. Didn't want to fire up the grill for so little, so put them under the broiler for a minute and half on each side. Added scallion, cilantro and lime to leftover rice, and tossed a side salad.

It fit into my Noom for the day.

Tina found a baby ham in Target.
I made potato salad. It was eh! ok!

Since I've had a rather large breakfast, I'm going to have a salad and fruit.

I made pot roast with mushroom and onion jus in the Instant Pot last night. Sides were Bob Evans mashed and steamed baby spinach. No heat in the kitchen. Tonight I will use leftover beef and mushrooms with added beans, barley and pasta to make soup in the Instant Pot. No heat again.

Still haven't heard anything about the A/C part. My A/C probably won't be fixed till the fall at this rate!!

Nachos. Mine were just cheese sauce, avocado-lime crema, and queso fresco. Craig added taco type ground beef and jalapenos. The crema was delish and we found a new way to make cheese sauce, no bechemel.

They gave me low fat Marzetti Italian in the bag.

I had some blueberries from the freezer too.

Thanks Lee.... It was Tina that put it together.
The topping was Ricotta cheese, with an egg mixed in, and slices of mozzarella.
I think it will be tonight's supper again.
