My bottom round roast I took out yesterday afternoon is still hard as a rock. So I guess pot roast is off. Maybe bacon, eggs, fried taters & onions and possibly a loaf of multi-grain or biscuits.
 
Not sure yet. Regardless, it will be something from the grill as I still have the stove top to install. Ah the price of remodeling.
 
Airport food or Subway sandwiches on the way home from the airport... leaving Mexico. T'is a sad day!

We're having pot roast, potatoes, carrots and home made rolls. One of my favorite dinners.

Making sort of a soul dinner today.

Having pot roast with potatoes & gravy over rice, mustard greens, candied yams, corn bread and the pound cake that I made yesterday for desert.
Looks fantastic sherm!! Have you posted the candied yam recipe? Raisins? Looks yummy and I have never made candied yams.

I also have one in the freezer that's frozen.

But when I was at the market with a friend on Friday afternoon, I saw them on sale with the store chain's card, and I just couldn't resist getting another one!!

So when I got home, I was going to rotate the two. But being that the one I just got wasn't frozen yet, I just left the one already frozen in the freezer and cooked the one that was just picked up.The temptation was just too enticing, rather than thawing one out!!

Ham is done. thats my part. the rest of the meal thats being fixed I can't eat any of it. My corn casserole/can't eat. Sweet potato casserole/candied /can't eat. dinner rolls I made but can't eat.

However the low carb/no sugar pie :encore::piesmiley1:no pineapple either but it looks so good. well maybe a small bite lol

Terriaki Pork stir fry with vegetable fried rice. Apple crisp with vanilla bean ice cream for dessert.
 
I'm hoping to make a braised "Pheasant in Wine Sauce", along with oven-roasted vegetables with turnip greens. Was hoping to perhaps do the pheasant whole in the slow-cooker, but aren't sure how to adapt the recipe. (Posted my question both in the "Poultry" & "Slow Cooker" forums.)

The diet doesn't allow you to have sugar or starch, right?

I HAVE to have some sugar or starch because my blood glucose level is too low. The pancreas isn't making enough of it. Which is why the Aktins or L-C diet is too dangerous for me to go on.

Boneless beef roasts were on sale last week and this week. So last week I picked up 2 bottom rounds - one I used for beef and veggie soup on halloween and when the second one thaws I will make pot roast (probably tomorrow). I think I will pick up a nice eye round this week for roast beef dinner.

right. type 2 diabetes. on insulin. Low carb/no sugar. No wheat, or grains.

Low carb veggies & low to no sugar fruit. Its really not that hard to adapt to or adjust the recipes for me. except when I make the things the kids want lol like sweet tators. Corn stuff. stuffing/rolls or bread. I still make it ,I just pass on eating it.

ya know growing up & up till a few yrs ago I had Low BG. Now its all downhill , but I take it one day at time. I say it could be worse.

Jimmy I think it also has to do with whether you are on the pills or on insullin to controll your sugar levels. I am on the pills and a sweet tater doesn't shoot my sugar up much at all. But Barb is on insullin so I think carbs affect her different.
 
No thoughts of what to make...

DW bought hot wings yesterday at some place at the mall.
She said...I can put them in the toaster oven and dry them out and make them crispy if I want to.
I'm not overly thrilled about that...believe me.

If not...I will take out some frozen sausage (hot)..and place it in a warm water bath for a half hour to thaw...and then cook it on the grill.
I have the nice Italian Bread "T" baby bought from the Italian Bakery near the city east of here.
Gosh...I wish we had a bakery. Not Panera...that bread is a rock, and like eating leather. Uggggg!!

I could have a very small sweetP loaded with butter & sugar free brown sugar/ cinn. :brows:

However I found 2 jumbo cans of sweet pot, loaded with sugar syrup, I used those. Kids love that sweet stuff. now thats gone. also the jiffy corn bread mix's & canned corn. :clap: next week I might make a bunch of cupcakes or cakes with the 4 cake mix's I found. Or just give them to my DD . I am working on getting rid of all my wheat flour too. I can only make so much pizza dough. I did make dark rye(pump) I had a little of it with some corned beef wow what a treat. I didn't test I didn't want to know.lol

Just be lucky you don't have to watch what you eat . :corny:

You are right peep.
Tina's Uncle is on pills. His highest if he cheats is like 190. He doesn't eat a lot either and he is 87.

Now...on the other hand.. there is a friend that has to take insulin, and she will eat 1/2 a sweet potato..only after checking her #'s to see if it is low enough to tolerate it. There are times when her lip feels fuzzy, and tingly...and by that, she knows her BG is way too low. ( Like 44 )...and right away, she will eat a 1/2 a roll and something to boost it back to her normal.
As a matter of fact...she just had a toe removed that would not heal due to he diabetic condition.
She is such a trooper. She loves to cook, but has been hampered from doing much because of her health condition.

I believed I had mentioned her before a while ago..from another cooking forum.
She was in the hospital, and the stupid dr's there..gave her so much glucose...her numbers were severely high, and she gained 15 pounds due to water retention.
the hospital was very lacking in diabetic control.

BTW can you give me the recipe for the chocolate dessert you make again. I wrote it down and put it on the fridge but it's gone now.

C C ....I give you, and all diabetics credit for being restricted, and watching your intakes.
I have a cousin in PA....and her husband will not adhere to his diet. He is in denial that he is a type 2, and he will every day..eat 3 big macs...a shake...and eat doughnuts from the bakery or Dunkin Doghnuts..anytime he feels hungry.
He is on pills...AND injection drugs. He is all blown up and swollen, and my cousin and he argue about his diet e v e r y day and minute.
That's all he does is eat...sleep all day, and drinks quarts of coke or Dr. Pepper soda every day. He drank three quarts of soda pop one day after he ate a whole pizza pie, and then he slept all evening and night like he was passed out. He has to breath with a sleep apnia machine too he is in such bad diabetic health.
 
I make several but this small one is just enough for a snack before bed :)

IT heaping cocoa ( I use ghirardelli but I guess any unsweet will work)
1 packet truvia
2 T heavy whipping cream.
whip it with spoon or fork. oh & I have been known to add kahlua :heart:


this one I made in the japper till I removed it from my kitchen.
1T butter melt it first. add
2T cocoa, pinch salt. 1egg, 1/2 t vanilla, 2packest of truvia, nuke 1min plus. till it looks like pudding /cake. oh I use a mug. serves 1.might be 3gm carb.

brownies. I pretty good size piece is 8cb

1egg
1/3c splenda
3/4c cocoa
pinch of salt/bakeP
1/2c nuts
2/3c white whole wheat flour
1/2c butter
vanilla
1c sour cream.
I mix the wet first, then the dry, then slowly mix together.
9x9 square pan.350` 20 min.
dense but gooey choco brownie :)
