What's cooking Wednesday September 23, 2009?

Using up more of my leftover chicken in something, then freezing the rest. I'm thinking something with pasta and broccoli. Do I need to say garlic will be used, also? ;^)

Spaghetti and meatballs here!
 
We unfroze some of that fantastic chicken soup we made last week. Maybe a salad and some grilled cheese sandwiches too.
 
Looks yummy Cooksie! We had my IC entry of Cheesy Loaded Potato Soup and leftover meatloaf sandwiches.
 
I don't know if that's red gravy or chili, Cooksie, but it looks awesome! Just look at all dat garlic floatin in der!

Leftover chicken and pasta;

Browning the onions nice and good in EVOO, butter and with salt and sugar added.

Then colored up the leftover shredded chicken pieces with a little s & p added, while the onions waited in a bowl.

Tossed the chicken in the bowl with the onions to hang out and then started in on some portobellos, brocc and slivered almonds (I love those things). More oil and butter added and everything coated.

Chopped some cillantro and threw that in the bowl in the meantime.

Added a little chicken broth to the pot after a few minutes and covered to steam a while. This is what it looked like.

Added the stuff that was in the bowl along with some half and half, parm reg and goat cheese.

Mixed it all nice and good and let it cook on low heat for a while.

Then added the pasta and let that warm up for a while.

Then ate.

Nice fajitas, Barb. I had some chicken ones last night and again for lunch today. Some plain, some with cheddar, some with sour cream (lol). Can't get enough fajitas!

It was basically Fryboy's porto and ziti recipe we both made Barb... to the tenth power ;^)
 
I'm making a big bowl of salad and nothing else for dinner. I've been piggin' out lately and need to scale down my caloric intake.

No, no asparagus. I added some other green stuff :respect:
And I got the goat cheese last time I went to Erie. In anticipation, but I did put some on some grilled romaine a while back.
 
I attended a cooking class at my golf club taught by Chef Danny.

Appetizer:
Goat cheese and roasted beets with arugula tossed in candied walnut vinaigrette

Entree:
Sauteed shrimp with spicy sun dried tomato cream sauce tossed in angel hair pasta

Dessert:
Wild berried wilted with habanero chili honey over vanilla ice cream. This was to die for and the flavored honey also works great on chicken.

Those sound great. I love goat cheese and beets. Did you get any recipes???

:bounce: yummy!! looks so gooooooooooooooooood!! is it sauce, chili or some kind of stew? and what did it go into or over? it looks great whatever it is.
