chow which mac and cheese did you make yesterday?
Looks great and I can't decide on a plan of attack today :)

Thanks Suzi. It's from a postcard I got in the mail. The bottom of the postcard says Eating Well and it's called Updated Mac & Cheese. Let me try to condense the recipe here.

put water on to boil and preheat oven to 450
coat an 8 x 8 2qt baking dish with spray
mix 3tbs bread crumbs, 1tsp paprika and 1tsp EVOO in a small bowl (I ended up doubling this)
cook 1 pkg frozen spinach and squeeze out water
heat 1-1/2c milk til steaming
add a slurry of 1/4c milk and 3tbs flour to the milk and heat til thickened
remove from heat and stir in 2c cheddar cheese, 1/8tsp nutmeg, s&p to taste and 1c cottage cheese
cook pasta for 4 minutes
drain and mix with cheese sauce
pour half mixture into bowl, add spinach, add other half and top with crumbs
bake at 450 25 minutes or until bubbling

If I would do anything differently, it would be NOT to use frozen spinach. I never did like the taste of frozen and I don't know why I thought this would be different. I'd use fresh.
 
Heres dinner from last night. Not bad for a girl born & raised in Queens, NY who had never even eaten this till about 8 years ago!:mrgreen::lol:

Thanks Chow..... I'll have to try it next time..... DH requested the one from Guy Fieri..... its got bacon....
I guess he doesnt want to eat THAT well lol

I would have never guessed cottage cheese. Looks and sounds great!

Fred, that recipe sounds awesome. I just picked up some fresh spinach at the Westside Market today.........I'm going to have to try that recipe! Thanks.
