Had Pierogies.....

I had sauerkraut filled, and the girls had potato cheddar cheese filled.
I had fried onions and sour cream to eat mine with. They were good for bought.

Son Jim got them in a little hole in the wall place called the Pierogi Palace in Rahway, NJ.

My plant club met on Saturday and there was a lot of pepperoni left over. Nobody else wanted it so I took it. Pizza tonight with TJ's garlic and herb pizza dough. I'll make a spinach salad to go with it.
 
Got busy yesterday so I didn't get around to posting the salad with grilled chicken, & corn dinner. Had a hankerin' for English muffins, so I whipped up a batch last night. Tonight I got home at 5:30, so it was breakfast for dinner. DW had fluffy scrambled eggs and I had a cheese omelet so I could use up the last of the Mozzarella. I shredded 1-1/2 Idaho potatoes so we could have fresh hash browns.

chili with beans today. I had mine with shells macaroni. Lousy... not a good match; should have used spaghetti.

Tomorrow I want hot dogs with peppers and potatoes and onions.
I am thinking of the dogs sliced thinly the entire lengthwise. fried with the onions nice and slow so the dogs caramelize with the onions.
Some crinkle cut potatoes coated with oil and butter, and baked in the grill outside.
Steam the peppers till soft; then puree and to the hot potatoes.

Build the sandwiches on buttered and warmed rolls.... add some white mild cheddar cheese and mustard.....Ummmmm!!!
 
I kind of got a hankering for some chili too, but you can bet your boots it want have any beans in it. I’ll second the motion for having spaghetti rather than shells.
 
I have pork chops for tonight. The devil keeps whispering in my ear...chicken fried pork chops, chicken fried pork chops :brows:, but I haven't decided yet.
 
I bought scallops today so will be trying bacon wrapped scallops with corn on the cob and fresh peas. A friend sent me this recipe for them and I can't wait to try them. Don't know who they are kidding about 15 servings. 1lb. is for tonight and the other lb. of scallops goes in the freezer for later.

We are having something simple tonight. T bone steaks with bow tie pasta with a spinach pesto. As for the steaks I cooked in Ghee and added garlic lemon butter to it before it was finished.

Here is the recipe for the pesto.

Spinach Pesto

INGREDIENTS:
2 cups fresh spinach leaves (you can also use Arugula or a combination of spinach with it)
1/2 cup fresh parsley leaves
1 garlic clove
1/4 cup pine nuts or walnuts (prefer roasted walnuts)
1 teaspoon dried basil (I used a 1/2 cup of fresh since I have it)
1/2 cup freshly grated Parmesan cheese
3/4 cup virgin olive oil
salt and freshly ground black pepper to taste (I didn't need the salt)

INSTRUCTIONS:
Combine spinach, parsley, garlic, nuts and basil in a blender or food processor. Blend with pulsing action to mix. Add cheese and whirl for 15 seconds. With the machine running, slowly add the olive oil. Season to taste with salt and freshly ground black pepper. Continue to process until pesto reaches desired consistency. Allow pesto to stand for about 5 minutes before serving to allow flavors to develop.

Makes about 1-1/2 cups of pesto.

You will have to try my spaghetti pizza and goulash tacos sometime. Yummy!

I don't like spaghetti pie. It's sweet spaghetti. No Likey!

The spaghetti sandwich on toast.....the best taste with the spaghetti at room temp. Not too much sauce. Butter the toast first.
We used to eat string bean sandwiches and Broccoli sandwiches too!:yum:

my stomach is takin' its usual yearly fit & i'm zonked most of these daze. i keep gatorade, green olives, make miso soup sans garnish (i make broth, plain), & v8 is nearby; & my visiting nurse brings me fruit juice. i'll be hungry soon enough~ then to make lamb & pastas, grilled cheeses & drink pop again. (later, once i'm hungry)
oh, & i opened 2 pear fruit cups, earlier, & have a few candies, too. gotta appear vibrant/healthy fer my Mom's visit. then, i hafta shop thursday-ish w/ a nurse.
i'm sleepy again. i'll see yins when i make an ok meal or snack.

I guess I'm not the only one then that finds pine nuts pretty tasteless. I much prefer walnuts or peanuts in a pinch to most other nuts.

No pictures, but made some Vietnamese Pho soup and a half gallon of Korean kimchi last night. Two of my favorites!
 
thanx, cooksie. my Mom is on her way (she is in the strip district & behaving as tho it's too complex to navigate while speaking to me. it's 1 stretch! dear Moms) anyhow, we hafta wash 4 months of my items that i've piled into baskets, so i'll see if she is hungry. a chix salad fer me. her pick if she gets a whim.

I made us each an omelet with onions .

I had mine drizzled with tobacco sauce. Hot Hot Hot!

I'm gonna be a nice guy, and slice the turkey breast for the Uncle and Aunt.

We picked down the rotisserie chicken and made stir fry teriyaki. Had a homemade blueberry muffin from my old blueberry lady. Been buying berries from her for over ten years and always take other folks to her place for berries and peaches. She has to be pushing 80 years old and is still going strong. Then the wife got me some smoked dried beef from my butcher. I have been on him for months to make some more and he finally did. She brought a lb. home and I called them up and reserved 2 more. Dang stuff is addicting. Got 1/4 lb. eaten already.:yum:
 
went & got my Mom a cheese panini & tomato soup/bread via panera, & then went & got a subway veggie sub fer me. w/ bacon!:wink: she made me have most of her soup. & keep her change. we split sammiches. my Mom- she rocks.

MAY AS WELL BE! My taste buds are shot from being an X smoker. Quit 3 1/2 years now! .... I use an e-cig to get my nicotine in small amounts. Vaping.

That was a typo... on the Tobacco....should be tobasco.

I have done tobacco sauce when I would Chew wads of Apple Jack or Red Man
