Ok, let's see what we can whip up for meals THIS week!

I think I'll pressure cook some pinto beans, cook some rice and maybe have some fried chicken with it!!:corn:
 
I baked yeast bread with oatmeals, sunflower seeds, wheat bran and linseed. It is tasty but didn´t rise well.

Made Italian bread & sandwich thins yesterday. Dinner tonight was Riblets, broccolislaw & b-size redskins pan fried in bacon drippings & herbs de Joseph.

One of my favorite soups. Ham and lima beans. I used the ham bone from Christmas Eve. Yum!

On Sunday I made chicken noodle soup for DW for an appreciation luncheon today at her work, and she brought the leftover home tonight. Added a couple toasted ham-n-cheese sammies and we called it dinner.


I also made 4 dozen Sweet Potato & Mascarpone ravioli, and 6 dozen 4-cheese ravioli for our son's birthday dinner on Saturday. All were frozen then bagged for Saturday.
Sorry, too much flour all over to bring out the camera.



Sweet Potato & Mascarpone Ravioli


· 2 sweet potatoes, peeled, boiled then mashed

· 1/2 vanilla bean (scrape out inside then mix with mascarpone..toss bean skin)

· 1/4 cup mascarpone cheese
· 1/2 Tablespoon orange juice
· Zest from ½ navel orange
· 1T Brown sugar
· Salt to taste


Combine it all until smooth with your hand mixer and put into your favorite pasta dough with #100 disher. I roll my dough to #3 thickness with my pasta machine, and use a [ame="http://www.amazon.com/CucinaPro-135-12-Ravioli-Tray-Square/dp/B002HWS79K"]ravioli form[/ame]. Makes 4 dozen.
 
lite dinner of petite toasts w/ a tuna salad ( half a pouch of tuna, a teensy dab of mayo, garlic, h-radish, fresh black pepper, a 'lil lemon. placed on petite toasts w/ dietz/watson wasabi mustard, w/ a strawberry to add a visual contrast. half a honeycrisp slices & pepper w/ greek yogurt bleu cheese dressing. seltzer & pabst to drink.
 
Beef enchiladas and chocolate chip toffee bars for dinner last night.

dammit-- cannot type. between pain meds & a broken finger, typing is none too simplistic.

Luvs, get some rest & take a breather. My fingers sometimes hurt a lot from constant typing also.
 
Homecook, I just realized that you desert looks like my Magic Cookie Bars!! The ones that my 11-y-o grand nephew nephew always likes to make!! Hah!! :WitchBrewsSmiley: :weber:
 
we were given a cheese plate via a bartender. me & my nurse partook in samples of many an item while shopping, too. deli items, soon, as well. i'll drink an ensure+ or 2 tonite, too.
