What's Cooking, NCT? Sunday, 01/11 / Saturday, 01/17/2015.

i have sausage pierogi. took me a few to figure how to adorn them properly- they were excellent. texture was great, as was their flavor, tho they needed to be squished to get rid of half their grease.

also, bartenderder gave me a cup of her chix noodle soup, as well, last night. tonite, think i'll make fries. have truffle kep-utch i have waited to use on food fer a few. think i'll take half to my bartender-pal.
 
I'm going to make some more of my famous Veggie Beef & Barley soup on Tuesday!

And maybe some sweet rolls. :weber: :applause:
 
Made a new bread recipe I saw in Diners, Drive-Ins & Dives on Friday night...Cranberry Wild Rice Bread. It was made just to make French toast for dinner, and it was very good. The wild rice component added absolutely nothing to the recipe that we could detect, but we really enjoyed bread and will make it again, without the rice.

They're Craisins, Peeps. I created the recipe from the ingredients I watched as the lady made the dough. I've done this before with breads, and can dial it in pretty close, based on Baker's Percentages and personal experience. Here it is...

Cranberry Wild Rice Bread
Makes one loaf or six muffins​


Sponge:

4 oz. Water
2-1/2 oz. Bread Flour
2-1/2t Yeast
1T Sugar

Ingredients:

5-1/2 oz. Water or milk
1 oz. Canola oil or melted butter
.30 oz. Salt
1/2-¾ C Cooked wild rice (optional)
1 Lg. Egg (whipped)
½ - 3/4C Dried Cranberries (Craisins)
5-1/2 oz. Wheat flour
8 oz. Bread Flour

Mix first four ingredients for sponge and let rise 1 hour.
Add remaining ingredients and mix for 7 minutes.
Allow to rise one hour then punch down and shape into loaves.
Allow to rise until almost double in size, about one hour
Pre heat oven 350F
Butter the top of the loaves and bake for 45-50 minutes or until 200F core temp.
Cool for 90 minutes before slicing.

My first tortilla pizza - pesto, cheese, red onion, black olives, artichoke hearts, sundried tomatoes, and feta cheese - loved it and will do it again:

Made my favorite birthday meal that my mom always made me. Chicken and rice with brussell sprouts.

DW had a staff meeting at work today with catered lunch. There was so much leftover that she brought home enough for our dinner and my lunch for tomorrow. Barb, it came from Tizzanos, so you know it was delicious.

The whole first floor is disrupted while I paint the woodwork, so we just had toasted ham & cheese sammies on whole wheat, with some Italian wedding Soup left over from Monday's staff meeting at DW's work.

I've been doing quick and easy. Had Cheater Chicken Chow Mein last night and burgers the night before
 
We had a salad topped with breaded chicken breast, and a twice-baked potato from the freezer for a side dish (I make them ahead then freeze them for quick sides).
 
Well, my homemade soup is all gone!

I'll start fresh with some pinto or lima beans tomorrow! :weber:
