Well, here's the lasagna, NO MEAT TODAY for me lol

---made with tomato sauce-- I LOVE Dei Fratelli diced tomatoes for this.. (garlic, evoo, onions, basil, oregano) ricotta cheese/spinach blend betwixt the layers and a little parm and mozz on the top.
I like the 8x8 recipe because it makes 4 good sized servings.

Everybody's dinners look so good! Oh, Mama - I'd like to have a bite of that meatloaf. I finally got around to unloading my camera - with last night's dinner on it. I fixed avocados stuffed with shrimps...some fresh sweet pineapple on the side.

I'd gladly share my meatloaf if you'll share you shrimp stuffed avocados! That looks wonderful!
 
You all just come on down! Be warned, however, that the temp right now (10:45 pm) is 85F and the humidity is 88%. Because our Mexican house is partially open, it has no air conditioning. So it's a little drippy. Look at it this way - you won't have to bring many clothes!
