Inspired by Sharon's steak fajitas, I made leftover pot roast fajitas. Made a fajita "marinade" for the beef, and quick sauteed the last of my garden Shishito peppers and onions. A bit of shredded Mexican blend cheese on lo-carb tortillas.

Delicious, and very cheeseburger-y!

I found a box of Bisquick in the back of my cabinet. The expiration date was 2019. Found a recipe for making it myself, so I did that.

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon butter (optional - I left it out)

I guess it worked, lol!
