I am having trouble getting to sleep tonight so I figured I may as well start the week now.

I'll be going food shopping in the morning so dinner will be determined by what I like. LOL

I am leaning toward stew/pot roast or Hero sandwiches.
 
Dinner will likely be Italian Heroes, Thumans potato salad and Wise Sour cream & onion ridges chips.
 
Had lots of left over pork loin.

This Cuban only used a couple of thin slices of the pork, so I see more pork left over dishes in my future.

Nice sandwiches, girls.
Mine was ever so slightly reheated London broil slices, cheddar, caramelized onions and mayo.
Didn't get a pic, I started a docu on the Menendez murders and was wrapped up in that.
 
I went to Famous Dave's for burger, brisket, and beer. :heart:
I had to much head on the beer for my liking.

Last night's dinner was roast beef with gravy, cauliflower/potato mash, carrots/zucchini/yellow squash.
 
I did the chicken @250 for 2 hrs, then turned the oven to 350 for the last 45 minutes.
These were huge pieces.
Rubbed generously with lemon pepper seasoning and garlic powder.

Dinner was Pot roast, mashed red & Yukon potatoes, mushroom onion gravy and asparagus.

Last night I had purple hull peas cooked with some ham pieces, frozen breaded okra, and some pickled beets. I cooked the okra in the air fryer. It was good, just not as good as deep fried okra, which I expected. I misted it with some peanut oil, and it came out a light tan, crunchy, and still soft on the inside. I'll do it again.
 
A dish I stole and then made my own from a restaurant called I "heart" Tacos. It's a vegetarian burrito made with a filling of skinned/seeded poblano peppers cut in strips or diced, corn, diced onions, garlic, all sauteed, cooled, mixed with creama (which is kind of like a thin sour cream, but tangier) and a Mexican melting cheese, plus green rice (cilantro, onion, garlic, sometimes a raw poblano or green bell, mixed with rice cooking liquid in blender to pulverize solids), wrapped in a tortilla, topped with a green sauce (tomatillos, onions, garlic, sometimes a poblano) and some more cheese. They use the filling part for quesadillas and tacos as well.

Craig went red with a filling using chorizo, refried pinto beans, and I'm not sure what else he put in there besides some cheese, and a red rice (a dried chili, tomato, onion, garlic like above).

Last night I carried in Seafood Mei fun -


Didn't eat most of it so I'll use it as the base for my favorite Mussels Dish, instead of Angel Hair !

I've got a Honeysuckle White rotisserie seasoned turkey breast tenderloin.
I'll do a Knorr noodle pack and a chopped Asian salad too.
All this poultry tho!

I think that's the last time I'll but the Knorr chicken pasta.
It's flavour is meh..
It doesn't thicken "after let stand for 2 minutes"
The rice products I've never had a problem with.
This tenderloin was delicious and tender.
The salad is an all in the bag deal.
 
We had large fillets of cod fish. Cooked in a pan; with butter and wine sauce.
French fries .... and green beans.
A cheese danish for dessert.
 
Tonight is going to be vegetarian chili over rice.
Caramel cake with buttercream frosting for dessert.

Not quite a bowl of red.
Chili- with tomato sauce, paste,kidney beans, chopped onion, minced garlic,corn, sofrito, sazon, and a touch of light brown sugar.
Underneath is 1 cup of rice and a slice of cheddar.
Stir it all together it spells maaaaagic.
Not the best picture, but! it's dinnah.
