What fruits to put in biscotti ?

DH is turning 50 (on Thursday) and I want to make biscotti as he looooves it and usually cannot find the fruit kind, that he prefers, over the more commonly sold chocolate variety.

I Spark People'd recipes, and I'm considering using the following ingredients that I have in the house already: dried papaya, crystalized ginger & Craisins. IIRC, I have small Clementimes that I can zest, as well.

What do you all think ?

Some of my favourite biscotti has dried cherries, white chocolate and pistachios.

I'm also fond of lemon and poppy.

Cranberry, walnut and orange zest.

Hazlenut and cinnamon.

Pignoli and fig.
 
It's true, that...Ralph..peanuts are soooooooo wrong for biscotti! I don't think I'd go the cashew route, either...

I'm really in the mood, now...oh Chocolate Mousse....are you making extra??:whistling:
