I had a couple ears of corn aging in the fridge, so decide to improve them by making corn casserole, something I have eaten, but never made before. I looked to Stella Parks on Serious Eats for a recipe.

The flavor was fine, but the texture wasn't right. There were too many things wrong to explain them all, but I won't do that again. Does anyone have a great recipe for corn casserole/pudding that uses fresh corn and doesn't include a package of Jiffy Mix?

By the way, chicken andouille sausage rounded out the meal.

Well.... I cooked the skirt steak on the gas grill, and when perfectly cooked, I pulled it off, and soaked it in a serving platter with the cooked marinade that I used. DD tried it, taking a pinch of meat between her fingers...... and .... Splat!, She spat it in the garbage can. I took a piece, and WOW! Talk about unable to chew into smaller sizes. Whew! It was like chewing on a car tire. LOL
You couldn't even hit it with an tenderizer hammer. It would bounce right off the meat, and hit me in the head. Tina got the steak at the ShopRite in Chester. I told her NO MORE! Costco is a better place for meats.
Thankfully, we had a few stuffed cabbages and baked potatoes I heated in the micro- zapper.

WOW. I buy skirt steak all the time in Wallington ShopRite. Always good. Sorry you had a bad time. I don't marinate mine. Just season and cook in a screaming hot cast iron pan.

The chicken nuggets had more "strips", than nuggets.
The flavour is ok, they're breaded with chickpea flour, which I find has a unique texture and very different taste.
The broccoli is a Green Giant steamer bag.
Tuscan seasoning. Very good.

I made a soup today as well.
I took all the vegs/beef and everything else I could think of to toss in from my leftover crock pot roast beef dinner.
It's a strange combo of cream of chicken soup, I added some herbs and doctored it up then put it in the fridge to have for tomorrow.
Taste test was good.
We shall see.
