What are you eating Sunday 7/23/2023 to Saturday 7/29/2023?

I took some pre-cooked little shell pasta and tossed it with onion, garlic, sliced grape tomatoes, corn, cilantro and olive oil mayo.
Spooned it over sliced lettuce and a sprinkle of fine shredded parm.
I love it 😍

DD is going to cook supper. Something with pork steaks. Sweet corn on the cobb with the mystery pork.
Lunch was leftover eggplant parm from the Italian deli. It was swimming in tomato sauce. The eggplant was so thin and breaded, it was like eating graham crackers soaked in sauce.
I must always say, Peeps' recipe makes the best eggplant parmesan I have ever seen. Nice and thick so you can taste the eggplant and not just breadcrumbs.

This recipe for quiche came out fairly creamy, but delicious.
The recipe called for 1c milk, I had heavy cream so mixed it half with water, also had lots of cheese.
Of course my crust once again didn't hold the crimp, and got too dark lol

Looks yummy! Did I miss the recipe? I have never made a real Quiché. Only an Instant Pot version without crust.
