1/2 lb green beans, cut in half
1 c vegetable broth
1 onion-diced
2 cloves garlic-minced
1 c sliced mushrooms
1 T poultry spice/rub
1/2 t thyme
1/2 c plain soy milk
2 T nutritional yeast
1 T cornstarch (mixed in 2 T water)

French fried onions or croutons

Heat broth to simmer. Add onions and garlic, then saute til onions soften.
Add mushrooms, beans, spice and thyme. Cook 7 minutes.
Pour in soy milk and the cornstarch mixture.
Whisk in yeast flakes, then turn off heat to allow to thicken.
Salt and pepper to taste, and top with french fried onions or croutons.
