WOW Norm, Nan, Barb and Joe!! Your dinners look fantastic!!
Joe could you tell me how you made the taters? Did you boil them then fry? Could I use the left over seasoned crumbs from breading my chops?

Everyone elses dinners sound great.

We wound up with taco bell last night. :yuk: The burrito wasn't as good as it sounded.

I hope the chicken is still good for tonight.
 
just eat lots of green veggies today with your meals and stick to the protein and you'll be back on track!



LOL I will have just the greens :biggrin: and protein. Spinach salad with bacon & mushrooms, eggs.

I think I have drank a gallon of water & its just noon. Hopefully I have got rid of some items I don't need :laugh:

Barb, don't fret the daily numbers, it's the monthly average that's important. If you have a day or two where you are high, but the majority of your days are in the normal range, it will all average out. At least that's what my hubby's diabetes doc tells him. He takes his meter into his office visits and the pull the numbers out and get the monthly average. That is what they base his medication on.
Don't despair, just eat lots of green veggies today with your meals and stick to the protein and you'll be back on track!

No problem with using the extra seasoned crumbs. In a skillet I put some EVOO & butter and simmer till the butter is melted. Then toss in about 1/4C of crumbs (more or less to your liking) to soak up the liquid. If using un-seasoned crumbs, toss in some Italian herbs to taste, but seasoned crumbs require nothing else. I boil the potatoes, drain, then put them in the crumb mixture. Toss to coat and they are ready to serve. You can also leave them in the pan if you like the taters to have a little crisp on them. Just mix them up once in awhile so they don't burn. Enjoy!

Thank you Joe!! I highly season my own crumbs and add a bit of fresh grated romano and parmesan cheeses for breading things. They should add a nice kick to the taters. I season and brown crumbs in butter to sprinkle over pasta but never tossed with taters. I can't wait to try this.

My mother used to prepare the green beans like that.

OMG they were so good, and she would fry the Italian seasoned crumbs till they got crunchy and browned.

Never had potatoes like that; but they are worth a try.

Mushrooms are good like that too!

Peep..you are a expert when it comes to cooking Mushrooms; that I know.
