Tomato Asparagus Salad

I saw this in my local newspaper yesterday under the column by The Amish Cook.
Definitely a keeper.


3/4 lb of fresh asparagus-cut and trimmed into 1-1/2 " pieces
3 plum sized tomatoes-halved and sliced
3/4 chopped red onion
1/2 c balsamic vinaigrette dressing

-Place asparagus in a steamer basket. Place in a saucepan over one inch of water.
-Bring to a boil and then cover and steam for 5 to 7 minutes or until crisp tender.
-Drain and immediately place asparagus in ice water.
-Drain and pat dry.

In a large bowl combine the asparagus, tomatoes, and onions. Drizzle with vinaigrette and gently toss to coat. Serve using a slotted spoon.

 
There is a restaurant here that I love and I think this is the asparagus vinaigrette that they serve. Thanks, Sass.

i may change 2 things
1 - i like to steam in those ziplok microwave bags
2 - i we like juicier tomatoes so i may sub grape or cherry tomatoes

do you think these changes will be ok?
 
Yum, Yum, Yum! I make a similar salad with fresh mozzarella cheese. You could add some tortellini or tri-color rotini & have a nice light Summer meal.

I don't think it would matter whether you steam on the stove or in the microwave, Peeps. But the real key, IMHO, is to make sure you don't steam it too long. You want the asparagus to still have some snap.

i always steam my veggies till just turn bright and have a crunch.
