Saw them make this spinach dish on the Milk St. TV show and it looked so good that I had to try it. I re-wrote the recipe in my own words.
Delicious and it's done in a jiffy!
I served mine over udon noodles (my first experience with them; excellent, but not much different than linguini).

Thai Stir-fried Spinach (Milk St.)
1 tablespoon fish sauce
1 tablespoon oyster sauce
2 teaspoons white sugar
3/4 teaspoon red pepper flakes
4 tablespoons canola oil, divided
3 tablespoons coarsely chopped garlic
1 1/2 pounds bunch (adult) spinach, trimmed of bottom 1½ inches, washed and dried WELL
Mix first 4 ingredients in a bowl. Add 1 T. oil to bowl and mix.
Heat 1 T. oil in wok or frying pan until just smoking. Remove pan from heat, add chopped garlic, stir for 20 to 30 seconds. Return pan to heat, add a 1/3 of the spinach, quickly stir fry until leaves are just wilted. Remove wilted spinach to a bowl.
Do the same with 1 T. of oil, half the remaining spinach, and finally 1 last T. of oil and rest of spinach.
Toss fish sauce mixture with spinach. Serve over rice or noodles.
