TGIF 2/10 What's cookin?

Mama

Queen of Cornbread
I haven't been doing much cooking this week so for dinner tonight, I'm making 15 bean soup. I'm gonna serve it in some homemade Italian Bread Bowls.

What are y'all having?

Spam fried rice, with leeks, napa cabbage, shiitake mushrooms, carrots, peas
sesame egg..and fried spam!
With egg rolls, of course.

Spam :brows: You might as well go all the way.....equal parts spam and the "V" processed cheesefood product along with a little onion, into the food processor, mix, spread on bread, brown under broiler....:encore:spam and cheese sandwich!!

Oh Cooksie....that's going on my "to do" list!!! I have spam and the big V in the pantry!

Here's dinner:

Spam, velvetta and onion. I've got to try that. Don't have any spam in the house right now but that is easily rectified. :chef:

When I worked..LOL..there was a guy in the office that would make toast in the toaster oven in work, and then throw 4 slices of Taylor Ham in the microwave, and cook it till it came out crispy, and 1/2 the size from when it was put in the microwave. The smell would drive everyone nuts, and would smell Soooo Good.

I don't fry mine like that, but as long as it is brown a little.
Tina likes hers crispy!

mama that looks good in your picture is perfect as always.

Jimmy your Philly steak cheese sandwich made me head for the freezer this morning to pull out a package of sliced roast beef, which I'm going to make beef and cheese sandwich on a roll with Knorr® du jour sauce.

Thanks Jimmy, Peepers and Guts!

Peepers, the soup is made from dried beans. You can find it in the same isle with the other dried beans. It's called 15 bean soup. It's Hurst's HamBeens 15 Bean Soup. The recipe is on the back of the bag. I use 3 qts of chicken broth instead of the water to cook them in and then add the diced tomatoes, onions, garlic and lemon juice. A can or two of Rotel with green chiles works well instead of the diced tomatoes if you have them. It adds a little kick to the soup. I didn't have any ham hocks so I seasoned it with a smoked turkey wing and some kielbasa this time. Here's what the bag looks like. It comes in a variety of flavors but this is the only one I've ever made.

I used the Italian bread dough that I made a while back and made 8 bread bowls. They were on the small side so we had to refill them but I don't think I would make them any bigger because I wouldn't want to waste that good bread.

 I haven't had them in quite a while, but I think you'll really like them. Bonus....freeze them, pull out one for lunch, put in in the toaster oven on bake until gooey on top, and then broil.....Gourmet Spam N Cheese

After a nice breakfast out yesterday, we made a run to Costco to pick up household "stuff". Couldn't resist the lovely fresh-looking net sacks of Littleneck clams & large mussels, so bought a bag of each. (Both were farmed & tagged - mussels were from Massachusetts; clams from Florida.) Real quality - every single shellfish unbroken, tightly closed, and sand-free. Zero throwaways!

Steamed them in some nice Pinot Grigio wine with a thick handful of fresh dill fronds, dried chili peppers, & smashed garlic cloves; served them with melted lemon butter & a sliced, buttered, & warmed crusty "Peppercorn" baguette. Sweetest shellfish we've enjoyed in a long time - will definitely be buying them from Costco again whenever they have them.

I made Antipasto Pasta - sliced up some pepperoni, salami, roasted red peppers, marinated artichoke hearts, celery, onions, garlic and green bell pepper. Sauteed the fresh veggies and garlic in evoo with Italian seasoning and red pepper flakes, added the rest, including the liquid from the artichokes, and warmed it all up. Added shredded Parmesan and Asiago cheeses and a bit more oil and mixed in cooked rotini pasta. Delish.

This is a great recipe for using up party leftovers  Just mix in whatever meats, veggies and cheeses you have.
