I came up with this one after a neighbor gave us a pack of pepper crusted round steaks. We gave them a big plate of ribs, and they turned around and gave us these because they had planned to have them for dinner, but ate our ribs instead. So, I had these round steaks which are notoriously dry and tough if done wrong. So what to do?
I came up with this. Grind them up, add some fat (bacon) to keep them from drying out, and then make them fun….put them on a stick with lots of flavor before grilling.
Teriyaki Meat Sticks
Ingredients
3-4 Beef Round Steaks
6-8 thick slices of Bacon
1/2 small medium onion
1 Tbsp minced Garlic
1/4 cup Teriyaki Sauce
1 tsp Worcestershire sauce
1/2 tsp lemon juice
1 tsp Honey
Cracked Black Pepper
Salt
Wooden Bamboo Skewers
Soy Sauce (at the serving table - optional)
Procedure
Cut the round steaks into 3/4” cubes. Cut the bacon into slices. In a food processor, add all ingredients. Pulse 3-4 times for 5-6 seconds until meat mixture is finely ground and mixed well.
Move mixture to a bowl. Now grab a small handful and shape it into a log around and lengthwise on a skewer. Keep doing this until all the meat has been used. Now grill the skewers for 6 minutes per side (12 minutes total). Remove and plate.
We plated with Udon noodles with a Red Vinegar Vinaigrette, and fried rice. We piled the fried rice into a small bowl and packed it tight, then inverted the bowl on the plate so that we had a nice dome of fried rice. Around the rice went the Udon noodles with vinaigrette, and then a fried egg topped the rice. It’s a great plate to just dig into with your better half. Good date plate.
We had a few skewers left over and gave them to the neighbor that gave us the steak. They were floored and couldn’t believe what we had come up with. They loved the flavor and texture and ask for more. I imagine I’ll be cooking for them in the future.
