Spanakopita - Greek Spinach Pie

3 pounds cottage cheese
8 oz. feta cheese, crumbled
2 cups grated cheddar cheese
3 eggs
3 tbls. dill weed
1 tsp. pepper
2 tsp. oregano
1/2 tsp. garlic powder
2 pounds frozen spinach, cooked and drained well
1/2 cup butter
1 pound filo pastry dough
1 cup dry bread crumbs
Caraway seeds


Combine the cheese, eggs and herbs. Squeeze excess liquid out of drained spinach, add to cheese mixture and mix well. Brush a 13X9 inch pan with butter. Lay a sheet of pastry in pan, allowing edges to extend beyond sides of pan. Brush with butter and sprinkle with bread crumbs. Lay another sheet of dough on top and again brush with butter and sprinkle with bread crumbs. Continue to layer the pastry dough in this manner until there are 6 layers. Fill shell with cheese and spinach mixture. Fold edges of dough over top and again start to layer sheets of pastry dough for a total of 8 layers on top of mixture. End with brushed butter on the top sheet. Tuck the extra dough that extends beyond the edges down inside the pan around the cheese and spinach mixture. Slash the top and sprinkle with caraway seeds. Bake for 30 minutes at 425 degrees F. Serve very hot. Out of this world!! :readytoeat::yum:
 
One of my favorite dishes! I've never made it with cottage & cheddar before...I'll try it! Thanks for sharing :)
 
I'm sure that there are many versions of this delicious dish, and I bet I'd love them all .... if someone made them for me!

I don't have the patience for phyllo.

Me neither Lee. I have some phyllo dough in the freezer....it's probably been there for a couple of years...I have no idea if it's still good :lol:

I'd gladly give to Ian to make this for me :w00t:
 
Good morning, All - Breezy, I got your post - it didn't appear on the forum and I've no idea why not, but I agree with you completely...this recipe isn't authentic Eastern European fare! But then, again, Ireland isn't authentically Eastern European...and I'm an authentic Irishman. Noboby can mangle a recipe like we do! There was a wonderful restaurant over the state line in Massachusetts several years ago that made some of the most mouthwatering spinach pie I've ever eaten and I realized when I posted the recipe I did that it wouldn't be like much of anything I'd eaten over there - especially with the cheddar in it. But I've made the recipe on more than one occasion and it really is good. Maybe, in the interests of not being authentic, we should rename the stuff and call it something else - "spanokopita" is the name on the recipe, however, and perhaps someone has some ideas what we ought to call it. People who come to the resort really like it, though, it sells well. What might you all suggest we call it? I've often seen recipes from the British Isles appear on the menus of other European cultures under different names - common practice, so why not in the reverse order? We've just gotta rename it. Help! btw, Breezy, I sure hope you find your grandmother's recipe and post it...I'd really like to be able to make the real deal. And if anyone has a recipe that doesn't call for Phyllo dough, I'd appreciate that, also. Phyllo gives me a migraine to work with! :D

Ian, we had spinach pies last night, Of course ours were Syrian. Wife made them, Good stuff. CF

Hi, CF.....Do you suppose your wife might be willing to share her Syrian recipe with me so that I could introduce it to the hotel? It's got to be more authentic then the one they are currently using which is the one I posted. I'd love to show your wife's recipe to our Exec and see what he thinks. He's always open to new and better ideas. Hopefully, we can also test drive Breezy's recipe, too. Always in the market for a better way. :blob_blue:

I'm with you, Lee...I love all things phyllo...but detest working with it. Now, if someone wants to send me some spanikopita, or baklava for that matter.....;)
 
Ian, I bet she would. I think it is pretty simple. Will ask her tonight when she gets home. She also makes our own flat bread. I may post that over in the bread section. CF
