Smoker at Lowes

See, all dark and charcoal looking outside. Moist inside. Looks like I had it over flames, but it was low and slow.
but i am a bit disappointed nice tight jeans or bike leathers or jeans and bike chaps would have been nice!! LOL just kidding.

that butt looks great!!
 
I have a similar smoker, and I like it a lot! The only drawback is that it will only burn the wood chips that I initially put in. If I try to add chips, they just sit on top, and don't burn.
 
I suggest you like the chip box with tin foil, soak the chips about 30 minutes before starting it up. Once the chips burn up which in mine last about 3 hours which is plenty then carefully remove the box. Pull the tin foil and replace with another piece and more soaked chips. If you don't soak them they burn too fast or flash which is also bad.

I think your way would work if I started with less chips, but I don't really like messing with it once I've got it going. Like they say, if you're looking, you ain't cooking! LOL!

That could be too but I put a good amount in mine too. After pretty much two hours of smoke anything else is pretty much a waste but that is my opinion only. If you soak them before they tend to smoke more than burn which is what you really want. I also start mine off setting it high enough to start the wood then turn it back add the water bowl and food. Close it an leave it till the visible smoking stops. At that point I don't add any more wood and just forget about it only keeping the water bowl with fluids.

Just picked up a Luhr Jensen Little Chief off Craigs for $20. Me thinkst the first go through will be chipotles. I have a HUGE crop of jalapenos in the garden.

Really easy to cold smoke in them - things like salmon, cheese, homemade sausages.

Thanks Lee. It supposedly was used only one time. The owner moved and in the process lost the racks. I looked on line and can get a set for $14.95 + S&H. But there's more if I order within the next 5 minutes!

I have a very similar smoker but it is a charcaol burner. You will like the size of the smoker. I have done six 8 lb boston butts at the same time. I use digital temperature probes on mine. Stick one through a potato and set it on the top rack by the exhaust vent. Don't trust the temperature gauge that came with the unit. My was off 50 degrees. There is a short learning curve with a vertical smoker but once you get a feel for the unit you can make some great Q.
