Smoked turkey with teriyaki honey injection

I had this 20 lb. turkey in the freezer for over a year and decided it had to be dealt with!

After thawing, I injected the whole bird with almost an entire jar of Cajun Injections Teriyaki-Honey marinade. Left it on a rack in the fridge overnight.

Wiped off the skin this morning, set it breast-side down in a pan of ice for an hour (so the breast won't cook too much earlier than the dark meat). Sprinkled with some Big Green Egg Maple BBQ rub.

Prepped the WSM with Kingsford Hickory briquettes, no wood. Cooked the turkey for 4 hours at 325 and it came out great! The dark meat all cooked, but the white meat still juicy and moist.

Not a strong flavor of the injection or the smoke .... all mild.

Skin was even good! The neighbors I shared with, and I, are all pleased!

Great looking turkey! I didn't know about putting the turkey breast side down in ice water before smoking. Makes perfect sense to me. :thankyou:
 
It sure do look great, I'm planning to cook a turkey next week and looking for a yummy recipe to try I guess I gotta try this one. Is it ideal to inject the flavoring a day before actually cooking it? is that the way to make it juicier inside?
