Smoked Italian Beef

well my version of it ..
i had a 4lb chuck roast that i decided kind of spur of the moment to
try and make Italian beef .. i have never had Italian beef so i am not
sure what it is supposed to taste like .. but this tasted great ..
so i rubbed the chuckie down with Italian seasoning and Garlic powder ..
put on the smoker at 225 ..

it took about 4 hours to get up to 160

after it was at 160 i put it in a pan with beef broth .. not a lot .. maybe a
half inch deep in the pan ..
covered in foil and until it hit 205 ...
i let it rest for about an hour after that ..
then shredded it ..

had a great flavor to it .. and made good sammies the next night ...
next chuckie i think will be for enchiladas ..

on hamburger buns with some of the sauce (there wasnt much left)
and then melted some mozzerella on it ...

That looks great, Q. I was wondering about this...
Did you shred it right in the same pan with the broth? It looks so juicy, like you put a sauce on it already.
This is on my shortlist. I'm probably going to do ribs this week, I think I'll throw a chuck on, too. Thanks for the recipe.

i've never had italian beef either. i mean, there's italian roast beef around here, but it's more of a roast that's just seasoned like you did yours, then sliced like cold cuts.

The only change was I also added a little onion powder to my chuck roast. I let it rest overnight all rubbed and wrapped.
The flavor reminds me of ox roast, a local favorite made with roast beef and spiced up juice. I had lots of juice with mine. I spooned it on the sandwich rather than mixing everything.
It pulled a little harder than pork butt, but was just as tender. I used maple for smoke.
