Here's an adapted recipe for Smoked Chili that I got from another site and made myself. Not supposed to copy recipes from that site here, I guess, so I've sort of disguised it, LOL!

Ingredients:

onion
garlic cloves
Jalapenos
Red & Green Bell pepper,
button mushrooms
hamburger
bulk sausage

1 can of stewed tomatoes, drained
2 cans of diced tomatoes, NOT drained
1 can of tomato paste
1 jar of picante sauce or salsa
smoked paprika
cocoa powder
chili powder
Mexican oregano
1 bottle/can of beer
Salt and pepper, to taste
Hot sauce, to taste
2 cans of red kidney beans

Season the first seven ingredients and slow-smoke them over charcoal and wood chips for about an hour or two, until the meat is done. Chop it all and add to a large pot.

Add the rest of the ingredients to the pot, cover pot and simmer for a couple of hours.

Whoo-boy. You leave the jalapenos whole? I'll bet it's got a pretty good kick to it. And with the Mexican oregano, too.
I'd like the recipe please.

And what are those circular racks? Do those go in your WSM?
 
No, I cut the japs in half and de-seeded and de-veined them, chow.

Yes, the racks are about 18 inches in diameter and fit on the WSM or a kettle. The rack under the burgers and mushrooms came with a Brinkmann kit of accessories which I bought online, and I've had it for years. The rack under the peppers and onions is from a mult-pack of inexpensive ones that are supposedly disposable, but I reuse them several times. I think I got those at Home Depot.

Q, that looks REAL great!

I have also done smoked Brisket. Hey, I'm in Texas and Brisket is BIG here. It is a meat that needs to slow cook though. I have also just slow cooked Brisket indoors and then made chili w/ it.
